Watkins Media Limited Slow Dough: Real Bread: Bakers' secrets for

    1 in stock

Book SynopsisBaking bread is an ancient craft; kneading the dough to produce a loaf is a fulfilling experience. But in industrial production, and even in the modern kitchen, one important ingredient is often left out of bread making - time. As the experienced bakers from the Real Bread Campaign will tell you, long and slow is far more satisfying than a quick finish. A long-proved loaf has more time to develop flavour, has a better texture and, in the case of genuine sourdough, might actually have health benefits. Slow Dough: Real Bread shares with you secrets from the experts on how to make a huge array of slow-rise breads at home - from basic brown, white and rye breads, to impressive loaves such as fig and fennel sourdough or goat's cheese and honey maslin, to a range tea breads, pizza doughs and classic international breads. You'll learn how to make different starters for different breads, as well as the fundamental processes: fermenting, kneading, proving, and baking. Treating Real Bread with the respect it deserves, there are also recipes - such as gingery treacle tart, breadcrumb pakoras and panzanella - for using up any that you may have left over, so you don't waste a crumb. In a world of mass-production and unnecessary artificial additives, this book about real craftsmanship is like a breath of fresh air.

    Clearview Evergreen

    1 in stock

Book Synopsis'Evergreen' symbolizes something that will last for years and never goes out of fashion. More and more people are focusing on eating green in their daily lives and Mikkel introduces vegetable recipes to inspire. What makes vegetables exciting is that they really change character and taste according to the seasons. In summer a carrot should be pulled from the ground, lightly rinsed and eaten as it is - completely spicy, tender, crisp and juicy. While in late Autumn, when it has been in the ground for a long while enduring weather and wind, and has become big, coarse but sweet in taste, it should be used in a delicious soup, pur e or baked to enhance the wonderful sweetness it has developed. Photographed by Anders Schoennemann as the seasons have move on and new vegetables become ready to harvest, the daylight changes as the long, bright summer evenings became clear autumn days. They enjoyed the most beautiful sunrises, the tranquility of frosty ice-cold mornings, and often the day's first meal was cooked over fire. Mikkel has managed to make easy, tasty and beautiful vegetable dishes that will make the most carnivorous to appreciate a green meal.

    2 in stock

Book SynopsisFor 25 years, the Burdon family have managed Jervaulx Abbey, one of the largest privately owned Cistercian abbeys in the UK. This book celebrates the wonderful cakes, bakes and chutneys they have become famous for in that time, all sold from the neighbouring Jervaulx Abbey Tearoom. From classic bakes such as their fruity tea bread to cakes with a modern twist such as their legendary red velvet cake, the loaves, tarts and tray bakes to emerge from the oven at Jervaulx have kept guests heartily fed for 25 years. Alongside these, they have also become famous for their range of relishes, jams and chutneys, which include a sumptuous Wensleydale beer and apple chutney, while their raspberry and almond cake was named Best Free-From Product at the Deliciously Yorkshire Awards in 2017. The tearoom is run by Ian Burdon and his wife Carol, and their two daughters Gayle and Anna, but it was Ian’s father, Major Burdon, who bought the land and what remained of the twelfth century abbey as a place to return to his Yorkshire roots in 1971. The abbey’s significant restoration project was managed by his sons, Rae and Ian, before in 1993, Ian and Carol repurchased part of the estate and converted a couple of greenhouses into the Jervaulx Abbey Tearoom, with daughters Gayle and Anna joining the business 15 years later. By making and selling a range of freshly made food since then, using ingredients sourced locally from producers around Yorkshire, the Burdons have not only bought a great deal of joy to their customers over the years but they have also followed in the footsteps of the monks who originally lived and worked within the abbey’s walls. This book is a must-have not only for fans of the abbey and its tearoom, but for cake aficionados everywhere.

Book SynopsisAN ENTERTAINING AND STYLISH EXPLORATION OF FOOD AND NATIONALITY, FROM AWARD-WINNING WRITER ANYA VON BREMZEN 'This voyage into culinary myth-making is essential reading... I couldn't love it more!' Nigella Lawson 'A truly captivating and evocative book. National Dish takes you on a food journey written with real warmth, wit and perception' Dan Saladino 'A sparklingly intelligent examination of, and a meditation on, the interplay of cooking and identity' Spectator ________ In National Dish, award-winning food writer Anya von Bremzen sets out to investigate the eternal cliché that "we are what we eat". Her journey takes her from Paris to Tokyo, from Seville, Oaxaca and Naples to Istanbul. She probes the decline of France's pot-au-feu in the age of globalisation, the stratospheric rise of ramen, the legend of pizza, the postcolonial paradoxes of Mexico's mole, the community essence of tapas, and the complex legacy of multiculturalism in a meze feast. Finally she returns to her home in Queens, New York, for a bowl of Ukrainian borscht -a dish which has never felt more loaded, or more precious. As each nation's social and political identity is explored, so too is its palate.
