    10 in stock

Book SynopsisA New Way to Bake reinvents and reimagines cakes, bakes and desserts, using plant-based ingredients that are available globally. Chef Philip Khoury has delved deep into patisserie in an attempt to make desserts that are ‘cleaner’, and that present finer flavours and textures. In A New Way to Bake, Philip transforms the traditional building blocks of baking by using plant-based, natural ingredients or ingredients that have been in use for over 100 years. A New Way to Bake uncovers a brief history of baking before setting out the Plantry, where the main ingredients and their functionalities are explained. Full of delicious bakes, from Apple Pie to Banana Bread, to Lamingtons and Tiramisù, there are sweet treats for any occasion. Recipes are broken down into digestible steps, with explanations as to why steps are important, and tips along the way too. Plus, there are even QR codes to help navigate through the recipes. Written in an informative yet approachable style, A New Way to Bake is a comprehensive guide that arms readers with a new outlook and tools to bake a better future. Trade ReviewPhil Khoury is a wizard pastry chef. With his spatula and whisk, he lands you in a dreamland of lamingtons, apple pie and red berry tart. But it's the decadent triple chocolate fudge cake for me! * Yotam Ottolenghi *A generosity of knowledge shared with no limitations. Phil’s book, A New Way to Bake, is a triumph in baking and patisserie. Full of heart and consideration for our future generations, it’s reflective of society’s demands to be sustainable; an emerging movement in both professional and home kitchens that will continue to grow exponentially thanks to Phil’s work. With tenacity, passion and drive, Phil is a hero in our industry, not to mention one of the kindest people I know. * Kirsten Tibballs *Phil takes you on an adventure through the classic recipes of patisserie and baking, transforming them into plant-based creations that will leave you amazed. * Adriano Zumbo *Phil Khoury has done it! This book is a game changer on so many levels; the skill and expertise required to create so many wonderful recipes in a way that’s accessible to the home baker shows on every page. This is a book that I can’t wait to start using and improving my knowledge on plant-based baking. Bravo Phil! * Ravneet Gill *Philip Khoury's book is a must have for anyone who loves to bake. Super insightful into plant-based alternatives with instructive and clear recipes that, regardless of your level of baking, are easy to understand. Most importantly, the book is packed with absolutely mouth-watering cakes, bakes and other sweet treats. * Rachel Khoo *It is no coincidence that the kindest, most talented man in the business has written this game-changing, plant-based cookbook which gently temps us to bake in a way that is natural and more compassionate for the planet. * Helen Goh *Phil is a trailblazer for the world of vegan baking. As a professional pastry chef, you can see the detail and the thoroughness he’s put into every recipe to ensure it’s the very best. If you’re a home baker looking to get into plant-based baking, or just keen to add some new recipes to your repertoire, then this is the book for you. A must-have baking resource for everyone with approachable and delicious recipes. It’s a book that I know I’ll have close by at all times! * Matt Adlard *A game changer. A beautifully designed book that opens a wide door for vegans, those who are lactose intolerant - and curious cooks who just love excellent bakes and desserts. * Mark Diacono, Delicious Magazine *Philip Khoury's book is such a revelation. How he injects such richness and crunch into his plant-based pastry and lightness into his eggless sponges is little short of a miracle. I've done side by side comparisons of his dairy and non-dairy tiramisu and brownies and, honestly, it's hard to tell the difference. I'm not saying this is the future of baking, but if it is, we've got nothing to worry about. * The Times *

  • Gateau: The Surprising Simplicity of French Cakes

Simon & Schuster Gateau: The Surprising Simplicity of French Cakes

    3 in stock

Book SynopsisJames Beard Award–winning writer Aleksandra Crapanzano shares the secrets of the cakes Parisians bake at home, from the simplest yogurt cakes to a deceptively easy bûche de Noël, from yuzu madeleines to boozy flourless chocolate confections. When we think of French desserts, we tend to imagine ornate creations and confections. Perhaps we envision a tarte Tatin, but rarely a homemade cake, whipped up on a weeknight with little fuss. But that is exactly what Parisians make and eat. Gâteaux are simple, delicious cakes, both sweet and savory, served to family and friends. As food-columnist Aleksandra Crapanzano spent time in Parisian home kitchens, she realized that the real magic is a certain savoir-faire, that distinctly French know-how that blends style and functionality in every aspect of life. By and large, the French do not try to compete with their chefs, nor with their boulangeres and patissieres. But many Parisians are natural cooks, and most finish dinner with a little something sweet, effortlessly made and casually served. The trick is having an arsenal of recipes that, once mastered, become blueprints, allowing for myriad variations, depending on what’s in season and what’s in the cupboard. It is a practical approach, and the French are nothing if not practical. That is the savoir-faire—from tying a silk scarf just so to popping a gateau in the oven without anyone even noticing. When you know what you’re doing, there’s no need to overthink it. It looks easy because it is easy. While the Paris culinary world is experiencing a fresh vibrancy, certain traditions remain intact yet may surprise in their modernity. For example, French cakes have less sugar. The pure taste of apples is not masked by cinnamon, and vanilla is never a given. A gateau may be lightly glazed, dusted with cocoa or confectioners’ sugar, drizzled with rose water, but rarely heavily iced. A splash of brandy, a squeeze of lemon or a thin blanket of ganache elevates even the easiest of cakes in mere minutes. And then there are savory cakes made with cheese, herbs, ham, baked into a delicious loaf. These cakes salés are ideal for picnic lunches, accompanied by a salad and a glass of Sancerre. Gâteau includes cakes for birthdays, summer feasts and winter holidays, last-minute dinner parties and school lunches, as well as beloved regional recipes and guest contributions from superstar Parisian bakers. Practical, simple, and filled with over 100 rigorously tested recipes and charming illustrations, Gâteau celebrates every day and sometimes fanciful French cakes in all their glory.Trade Review“Offers up over 150 French cake recipes, from savory to sweet, each one eminently do-able…wherever you are. Aleksandra really understands French home baking.” —David Lebovitz “If, like me, you get a little giddy around French cakes, take a look at Gateau. My copy has so many stick notes that I can barely close it.” —Melissa Clark “Channel your inner Parisian and serve simple, yet stylish cakes with these tips.” —Martha Stewart “Delightfully charming . . . featuring beguiling illustrations . . . [the cakes are] unfussy and easy to throw together, and as delicious as promised.” —The Washington Post "Goes beyond recipes to make a bigger argument about how ease and simplicity define French baking culture.” —The Atlantic “A smart, charming new book on French cakes... Got an urge to bake and simultaneously submerge yourself in French culture? Gateau will enchant you.” —The Boston Globe “Crapanzano has the secret to confidently, casually chucking a cake in the oven while you pour yourself another glass of wine and get back to the table... In Gâteau, she shares her Rolodex of fantastic French cakes that you won’t spend three days psyching yourself out over.” —GOOP “While the recipes are serious and many, the mood is every bit as playful and enchanting as the Paris afternoon of your frilliest fantasies.” —Fodors “Want to make stunning French pastries at home with little fuss?... Flip through whimsical illustrations and charming anecdotes, and learn how to make a simple gâteux sing.”—Epicurious “Aleksandra nails what's so inimitable about the French and how they just casually throw together a showstopper.” —Edible LA “Shares the secrets to culinary savoir faire in charmingly illustrated pages... streamlined recipes rooted in classic techniques serve as blueprints for myriad variations based on the season or what’s in the cupboard.” —Atlanta Journal Constitution “Charming... endlessly adaptable.” —Jenny Rosenstrach, Cup of Jo “Her fabulous recipes will have you wooing your friends with a whole range of sweet delicacies.” —Nancy Silverton, chef and co-owner of Mozza Restaurant Group “Chic, charming, and delectable... Everything about it—delicious writing, lyrical illustrations, and the recipes for cakes simple and seductive—conspires to bring joy. Gâteau is enchanting.” —Dorie Greenspan, author of Baking with Dorie “An utterly delightful compendium of simple French bakes.”—Garden & Gun

Book SynopsisFrances McNaughton shows how to make 20 cute and funny sugar animals for cake decorating using sugarpaste and a few simple tools and techniques. First we learn about the simple shapes that are the basis for all the animals, and the few basic tools that are needed. Then it is staight on to making elephants, monkeys, pandas, lizards, dolphins, kangaroos and much more. The constituent parts of the animals are shown with the step by step instructions, and annotated for clarity, then each finished animal is pictured in all its splendour. Animal lovers will be thrilled to see any of these appealing creatures on top of a celebratory cake.Trade ReviewWinter 09/10 Sugarcraft expert Frances McNaughton has designed 20 wonderful sugar animals that you will want to make using simple tools and techniques and readily available ingredients. There are clear step-by-step instructions for the range of popular animals which include an elephant, panda, hippo, lion and monkey. * Squires Kitchen FOOD *Dec 09 Here are 20 great designs with clear step-by-step instructions that are easy and fun to make using simple techniques and readily available ingredients. They're the perfect finishing touch for young and old for the festivities ahead. Frances shows how to make cute and funny animals using sugar paste plus a few simple tools and techniques. We learn about the simple shapes that are the basis for all the animals and then it's straight on to making elephants, monkeys, pandas, lizards, dolphins, kangaroos and much more. * Machine Knitting Monthly *Dec 09 If you enjoyed playing with modelling clay as a child, then sugarcraft is surely going to have a lot of appeal. Celebration cakes decorated by hand are so much more special than those bought in stores, and you can tailor the decorations to suit the taste of the recipient. Most people have a favorite animal; so modelling these is a good place to start. I've always enjoyed doing this even though I don't personally have a sweet tooth (it really is not a requirement for sugarcraft). I own other books on the subject, but tend to find that too many of them fall into the usual craft book tendency of insisting you need everything but the kitchen sink, although for this craft the latter is a necessity! Here you just need the paste, basic kitchen equipment and a few other bits and pieces that you probably already have. Fancy cutters can come later - this is about working with your hands. There is a page showing the shapes you need to make so you can practice making them neatly before you begin, and then it is on with the projects. There are twenty animals in here rather than the usual twenty plus twenty more variations, but you need both pages for a photo of the finished item, instructions plus another extremely useful feature. For every animal as well as the completed model it shows each separate piece you need to make in order to assemble it. Each part has a number which corresponds with the instructions, and if you have practised making the shapes at the front (and are reasonably proficient with modelling clay) then it is all relatively easy to make a professional job of it. Animals include favorites such as tiger, elephant, dolphin, zebra, monkey, crocodile, snake, panda etc tending towards those found in a zoo rather than pets or creatures associated with festivals. You will just have to roll out your sugar paste and see if you can make reindeer and chicks for yourself…a really user-friendly book. * Myshelf.com *Apr 10 This book by British Sugarcraft Guild member Frances McNaughton is absolutely adorable! I loved the darling designs for little sugar paste animals included in this book. You’ll find directions for elephants, panda bears, a lizard, snakes, hippopotamus, dolphin, kangaroo, camel, tiger, seal, skunk, a mischievous raccoon, leopards, koala bears, lions,a crocodile, monkeys, a zebra, giraffe, and a frog. A virtual zoo full of animals to create to decorate everything from cupcakes to birthday cakes, to even a wedding cake if you so desire. The versatility of the sugar paste animal designs is that they can also be crafted from polymer clays or other air dry or oven dry sculpting clays as well…not just used for cake decor. You can create more permanent versions of the animal menagerie for keepsakes. I found myself “oohing and ahhing” over these adorable animals and I was amazed that each and every design ,though it may look complex, actually uses very basic steps to create stunning results. Easy for a beginner to create very nice results for their cupcake and cake creations. I can’t wait for the next time that I have a child’s birthday cake to create! I’m going to have so much fun making something memorable for a child in my life….but gracious!…these are so cute though, that I do believe that someone will need to create a cake for me with these darling critters on it too.(after all the little kids can’t have all the fun now can they?) This is a darling book to have on hand for the next time you are called upon to create a birthday cake or special occasion cake. * stliving.com *Table of ContentsTwenty great designs Clear step-by-step instructions Easy and fun to make

Book SynopsisThe ultimate compendium of cake decorating techniques for avid amateur bakers everywhere. Cake Decorating for Beginners combines nuggets of advice and popular projects from books in the Modern Cake Decorator series. You are taken through the whole process from the initial bake to icing your cake with those final embellishments. Expert cake decorators Christine Flinn, Sandra Monger and Stephanie Weightman pool their knowledge to help you with stencilling, using cutters, piping and painting.Trade ReviewVery well presented book with excellent photography and clear instruction. Yes, you would need to buy some tools but if you wished to progress with cake decorating as a hobby you would need them regardless. Excellent book to kick start a great new hobby. -- Helen Skinner * Customer review *This book is a gem! Great, easy to understand step by step instructions, with lots of lovely photos. I have already made one of the projects and it turned out really well, (and even looked like the picture in the book!) A great book if you are new, or even experienced in cake decorating. -- Sally-Ann Walters * Customer review *The first thing to mention is that this book contains material from previous Search Press books, so if you own 'Painting Flowers on Cakes', 'Stencilling on Cakes', 'Using Cutters on Cakes' or 'Piping on Cakes' this might not be the book for you. The book is well illustrated and contains many helpful hints and tips but many of the projects seem to need a lot of equipment suggesting it is aimed at bakers with some experience rather than complete beginners. The authors have given permission for the projects in the book to be used for selling for charity which is a nice touch. -- Nicola Urmenyi * Customer review *I love this book. It is a great step by step guide to cake decorating for beginners or advanced cake decorating. The cake designs are modern and there’s something for all occasions. So many new skills and techniques. Brilliant book. -- Julie Meggitt * Customer review *There are some lovely designs for cakes in this book, but extra specialist equipment is required for most designs that the usual amateur home baker may not have in their cupboard, e.g. stencils, brushes, moulds etc. There are a couple of designs in this book that I have seen before in other books, but if you are new to cake decorating books this one contains a range of skills to try so may be good for a starter book. -- Emily Mattam * Customer review *This is a useful guide for beginners with easy to follow step-by-step instructions and photos. Lots of different techniques featured but you will need to buy additional materials to get started with most ideas. There is a useful guide for the materials you will need and handy templates in the back of the book. -- Samantha Ripley O'Donnell * Customer review *Search Press has two baking titles out this autumn. Ideal for new starters, Cake Decorating for Beginners (£12.99) combines nuggets of advice and popular projects from across the Modern Cake Decorator series. The compendium features contributions from Christine Finn, Sandra Monger and Stephanie Weightman, who pool their knowledge to help with stenciling, cutters, piping and painting. * Craft Focus *Table of ContentsMaterials and tools 6 Techniques 14 The Cakes 50-153 Sunflower Cake 50 Toy Train 54 Indian Inlaid Cake 58 Flower Border 66 Modern Blackwork 72 Poppy Cake 80 Chocolate Heart 84 Hot-air Balloons 86 Rose Basket 90 Scrolls and Roses 98 Trellis Cake 106 Cameo Cake 108 Engagement Heart 112 Wedding Cake 118 Baby Shower 122 Pansy Cake 124 Summer Bunting 128 Summer Roses 132 Daisy Cake 136 Single Tier Cake with Daisy Flowers 138 Falling Leaves 142 Lavender Cupcakes 146 Patterned Cupcakes 150 Lacy Cupcakes 152 Templates 154 Index 160

Book SynopsisTapping into the hottest trend in the cookery-as-craft market right now, this book is crammed with information on the art and craft of using fondant in cake decorating. Fondant is the most popular method in decorating trends because of its smooth surface, vivid colours, and chic finish. You can roll it, cut it out, mold it, and colour it. And author Carol Deacon shows you how. Decorated cupcakes are a favourite with adults and children, and this book is for you if you want to make vampire cakes for Halloween, or a cupcake tower adorned with cookie-cutter daisies, or give as gifts or favours adorable gum-paste animals or delicate ribbon-embellished porcelain-like flowers. Crammed with over 200 professional fixes, insider tips, and money-saving secrets, content is arranged by topic to enable any crafter to achieve a professional look to their cupcakes, cake pops, or celebration cakes.Trade ReviewSept 13 We are all thinking of icing the Xmas cake and hence a plethora of cake decorating books hit the market. This is an all round book. The front cover gives you a fair idea of what is inside. Cakes of all descriptions, decorated in different ways. You’ll find an amazing 300 tips, techniques and trade secrets within the pages of this book. It is not a massive tome, merely a 160 page paperback. The book starts with Cake Basics, where you’ll find equipment and tools you need, cake recipes for square and round tins including pound, chocolate and fruit cakes. There are also many very useful tips in this section. Do you know how to add extra moistness to a pound cake? Section 2 is all about fondant, its varieties and how to use them. This section is quite detailed. It goes from the basic covering a sponge cake to fantastic creations with stencils, writing, and fondant roses or characters. Section 3 is about the love of my life in cake decorating – buttercream. It includes how to make, cover a cake, create different finishes, piping and more. Did I say I love buttercream best? Section 4 is all about chocolate. Learn how to work with chocolate including tempering, ganache and decorating. This book also includes how to make and use templates, with some examples for you to use. I would recommend this to anyone who loves to make cakes. Or anyone who buys a shop bought one to decorate. * Welovefinefoods.co.uk *Oct 13 This is quite simply fantastic. It's especially perfect if you have been watching The Great British Bake Off and you're suddenly itching to take your baking to the next level. It's so cute, so accessible if you haven't decorated a cake before, so useful and so challenging if you already decorate a lot, it's just such a perfect book. I couldn't stop looking at this when I received it from Search Press. It immediately answered a lot of my questions, such as if you can lay fresh flowers on a cake and how to do this, and how you will need more colouring for marzipan than fondant as it is not naturally white. Carol has split the book into four sections - Cake Basics, Fondant, Buttercream and Chocolate. At the end of the book are lots of templates for you to use to decorate your cakes. To give you an example of how technically useful this book will be - there is a chocolate cake, a fruit cake recipe and a pound cake in a table so you can adapt the ingredients for eight sizes of cake - especially useful if you are baking a wedding cake. She tells you exactly how to calculate the position of the dowels between a tiered wedding cake. She covers writing on fondant, moulds, cutters and crimpers and making fondant figures - an amazingly illustrated section of the book. Just simply adorable. In the buttercream section she covers piping animals and faces, frozen buttercream transfers and flowers. The Chocolate section covers tempering chocolate, ganache, making a chocolate lace bowl, chocolate cake pops and truffles. * sewingisforgirls.blogspot.com *Oct 13 A great guide for the beginner and intermediate sugarcrafter alike, this comprehensive title contains over 300 professional fixes, insider tips and money-saving secrets to help improve your cake decorating techniques. Divided into four sections which cover cake basics, fondant, buttercream and chocolate, and with colour photography throughout, this is a helpful baker’s bible to keep in your kitchen and refer to in moments of uncertainty. * Wedding Cakes *Nov 13 We knew this was going to be a fabulous book after the well-detailed projects that Carol compiles for us each month, and we are not disappointed! It contains tips, techniques and trade secrets and is perfect for a beginner, but even more experienced cake decorators will find super tips they may not have been aware of previously. * Cake Craft & Decoration *Table of ContentsPRELIMS 5 INTRODUCTION 7 CHAPTER ONE: FONDANT BASICS 24 The beginner's kit Improvising tools Building a collection of tools What is fondant Working with fondant Flavouring fondant Storing fondant Storing models or cakes covered with fondants Storing and transporting fondant decorated cake pops and cupcakes CHAPTER TWO: CAKES AND BOARDS 20 Sponge cake Slicing the cake and filling the sections with buttercream Coating the outside of a round sponge cake with buttercream Rolling out the fondant Covering a square cake Covering fruitcake Working small scale Double coating Covering number or odd shaped cakes Stacking fondant-covered cakes Covering cake boards with fondant Using boards as hidden supports Using cake boards as background model supports Using cake boards for cupcake displays Ribbons CHAPTER THREE: DECORATIVE TECHNIQUES WITH FONDANT 68 Painting on fondant Frills and fancies Molds, cutters, and crimpers Piping on fondant Lacework Dotty cake pops and cupcakes Broderie Anglaise Broderie Anglaise cupcakes Writing on fondant CHAPTER FOUR: MODELLING WITH FONDANT 38 Making fondant figures How to personalise your characters Making fondant animals Making fondant flowers Additional information INDEX & CREDITS
