In many instances these markers are laid down in the way that foods were restricted, in other words by looking at the negatives instead of the positives of what was consumed. Michael Beer looks at several aspects of food restriction in antiquity, for example, the way in which they eschewed excess and glorified the simple diet; the way in which Jewish dietary restriction identified that nation under the Empire; the way in which Pythagoreans denied themselves meat (and beans); and the way in which the poor were restricted by economic reality from enjoying the full range of foods. These topics allow him to look at important aspects of Graeco-Roman social attitudes. For example, republic virtue, imperial laxity, Homeric and Spartan military valour, social control through sumptuary laws, and answers to excessive drinking. He also looks closely at the inherent divide of the Roman world between the twin centres of Greece and Rome and how it is expressed in food and its consumption.

The recipes are remarkable for their close attention to detail and much greater information about quantities of ingredients than similar collections from earlier centuries. They include dishes such as the famous cocatrice or basilisk, which is a combination of pig and chicken constructed as a fabulous beast, to the more mundane, but more cookable, blancmanges, stewed oysters, croustades, pies, venison, beef and chicken dishes. The edition gives the original text, a translation into modern English, a full commentary and notes for the modern cook who wishes to interpret each dish in his or her own kitchen.

    Book SynopsisThe Livre fort excellent de cuysine is one of a family of cookery books that first saw the light with Pierre Sergent''s La Fleur de toute cuysine (renamed Le Grand cuisinier de toute cuisine) of 1542. This edition of the Livre fort excellent was published in 1555. Scholars have often dismissed the printed cookbooks of 16th-century France as simple rehashes of the great medieval Viandier of Taillevent or as merely concentrating on marginal dishes such as sweets and sugarwork. True French cooking, they say, did not start until the publication of Le Cuisinier francois by La Varenne in 1651. While there is some truth in this, the translators and editors of this book would maintain that the change from medieval to modern (already under way in Italy and Spain for example) can be dated back to this book and its kindred; that it was more than a plagiaristic copy. The Livre fort comprises about 70 pages of original French, with an English translation on facing pages. The translation is the work of Timothy J. Tomasik, Associate Professor of French, Valparaiso University, Indiana; an historical introduction discussing the culinary significance of the work is by Ken Albala, Professor of History at the University of the Pacific, Stockton, California. Professor Tomasik has translated other contemporary gastronomic texts and has written many articles on the French table in the Renaissance, and co-edited the volume At the Table: Metaphorical and Material Cultures of Food in Medieval and Early Modern Europe. Professor Albala is the author of Eating Right in the Renaissance and a leading light in historical food studies here and in America. He is editor of the journal Food, Culture and Society.

Landscapes were created, formed and interpreted by town dwellers, women and lesser-known gardeners and designers as well as the 'great men' of the past. Based on papers given at a conference at the University of Birmingham, and written by distinguished scholars who are also writing for a wide audience, these essays highlight the wealth of recent research into landscape and green spaces in the West Midlands. The book ranges from the Picturesque movement in Herefordshire to William Shenstone's unique ferme ornée at The Leasowes, near Halesowen and the aspirational gardens and allotments of the Quaker ironmasters at Coalbrookdale in Shropshire. Other contributions celebrate women's entrepreneurial activity in the nursery trade, chart the uncovering and restoration of a hidden eighteenth-century landscape at Hagley in Worcestershire and explore the lost Vauxhall pleasure gardens in Birmingham, which were established as a commercial venture in the eighteenth century.     Book SynopsisThe decision to build a new army camp in the small market town of Colchester in 1856 was well received and helped to stimulate the local economy after a prolonged period of economic stagnation. Before long the Colchester garrison was one of the largest in the country and the town experienced an economic upturn as well as benefiting from the many social events organised by officers. But there was a downside: some of the soldiers' behaviour was highly disruptive and, since very few private soldiers were allowed to marry, prostitution flourished. As a result the number of cases of venereal disease soared. Having compiled a database of nearly 350 of Colchester's nineteenth-century prostitutes, the authors examine how they lived and operated and who their customers were. What were the routes into and out of prostitution and what was life like as a prostitute? Was it even seen by some as an acceptable way for girls and young women to boost inadequate earnings from more respectable work? How did prostitution intersect with the social life of the town, especially as this was played out in local beerhouses? This is also an investigation of how authority in its many guises - from policeman and solicitor to magistrate and lady reformer - dealt with prostitution and the many problems associated with it, bringing a great many vested interests into conflict with each other. Such large numbers of women could not be tidied away into a discreet red-light district but lived and worked all over the town. They gave the police considerable trouble, but it was routinely declared that nothing could be done about them. Prostitution itself was not illegal whilst efforts to tackle the women's criminal activity, such as soliciting, theft or assault, were largely ineffective. Under pressure from the army, Parliament passed the Contagious Diseases Acts, allowing prostitutes affected with venereal symptoms in garrison towns to be confined for treatment, but there was widespread opposition to these controversial laws. Bringing to bear considerations of class and gender, urban development, health and welfare, religion and moral reform, this is a wide-ranging, detailed and original study. As well as providing a vivid portrait of nineteenth-century Colchester, it will appeal to all those interested in the history of women's work, policing and society more widely.Table of Contents1.
