  • The Science of Sugar Confectionery

Royal Society of Chemistry The Science of Sugar Confectionery

    1 in stock

Book SynopsisSince the first edition of The Science of Sugar Confectionery (2000), the confectionery industry has responded to ever-changing consumer habits. This new edition has been thoroughly revised to reflect industry’s response to market driven nutrition and dietary concerns, as well as changes in legislation, labelling, and technology. Building on the strengths of the first edition, the author’s personal knowledge and experience of the sugar confectionery industry is used to provide a thorough and accessible account of the field. Written so the reader needs no more than a rudimentary level of chemistry, this book covers the basic definitions, commonly used and new ingredients in the industry. It then discusses the various types of sugar confectionery including "sugar glasses" (boiled sweets), "grained sugar products" (fondants), toffees and fudges, "hydrocolloids" (gums, pastilles and jellies) and concludes with a new chapter on future outlooks. Featuring expanded coverage of special dietary needs, covering topics such as vegetarianism and veganism, religious requirements and supplemented products, this new edition reflects current and evolving needs in the sugar confectionery field.Trade ReviewIn this second edition he deals, thoroughly, with the changes that have come about since the first edition in 2000, including dietary concerns and changes in legislation, labelling and technology. This is not a book that apologies for its subject matter, and it covers all aspects of an important industry producing a large range of products. -- John Emsley * Chemistry and Industry Issue 03 2019 *'Sweets for my sweet, sugar for my honey', so sang The Searchers pop group in 1963, and it seemed an innocent way of praising a loved one. Unthinkable today, of course, since sugar is regarded as something to be avoided at all costs, and now to be taxed when added to soft drinks. Sugar is seen as a major contributor to obesity and Type-2 diabetes, conditions which are becoming more prevalent. This is not the first time that sugar has come under attack. Almost 50 years ago, in 1972, John Yudkin's bestseller, 'Pure, white, and deadly', sugar was deemed the carbohydrate of which we consumed far too much in the UK, adding it in spoonfuls to the many cups of tea we drank every day. Sugar is still a major ingredient in sweets, and these are the subject of chemist William Edward's book, The Science of Sugar Confectionery. In this second edition he deals, thoroughly, with the changes that have come about since the first edition in 2000, including diertary concerns and changes in legislation, labelling and technology. This is not a book that apologises for its subject matter, and it covers all aspects of an important industry producing a large range of products. Edwards devotes a chapter that includes a section on dieting, calorie-counting and weight-loss regimes, which regard sweets as something to be avoided. Yet sweetness is a sensation that we are genetically disposed to like, even to crave. Many chemists work in the food-related industries, and a number of them will no doubt work for companies that produce sweets. They will be aware of ingredients, which have come under attack in recent years, such as colourants, flavours, and preservatives - and all are a possible threat to health. Edwards deals with them in detail and points out that more effort has been put into tackling these issues than ever went into formulating the traditional sweets in the first place. And not without success, as in the case of the ever popular Rowntree's Fruit Pastilles. These famous treats continue to be sold because its creators have been able to modify the ingredients to make them acceptable - at least for now. -- John Emsley * Chemistry and Industry Issue 03 2019 *Table of ContentsIntroduction; Basic Science; Nutrition; Ingredients; Emulsifiers, Colours and Flavours; Confectionery Plant; Sugar Glasses in the Chemistry of Boiled Sweets; Grained Sugar Products; Pan Coating; Toffees and Caramels; Gums, Gelled Products and Liquorice; Chewing Gum; Aerated Products; Sugar-free Confectionery; Lozenges; Tabletting; Experiments; The Future

Book SynopsisThe fascinating lives and puzzling demise of some of the largest animals on earth.Trade Review"Ross McPhee's End of the Megafauna is a marvellous survey of what we know about the magnificent creatures who shared our world just 12,000 years ago, and he is brilliantly served by the superb illustrations of Australian artist Peter Schouten. There are also excellent maps and diagrams, helping you remember the difference between your Pleistocene and Holocene. The book is also a compelling, sometimes demanding and scientifically rigorous detective story." -- The Sunday Times"Palaeomammalogist Ross MacPhee examines the theories, such as human over-hunting, climate change, emergent infections and food-web disruption; articulates the ongoing debate around them and what that might tell us about today’s biodiversity crisis; and takes a look at de-extinction. Packed with evocative artwork by Peter Schouten." -- Nature"In End of the Megafauna, palaeontologist Ross MacPhee explores the current hypotheses, weighing up the evidence with academic rigour and delivering it with pop-science clarity." -- BBC Wildlife"Delving far deeper into the subject matter than anything you would have likely experienced before, this is a fascinating examination of a long-forgotten past and proof that giant life didn't end with the dinosaurs. • Guesstimation 2.0

    Princeton University Press Guesstimation 2.0

    10 in stock

Book SynopsisReveals the simple techniques needed to estimate virtually anything and illustrates them using an eclectic array of problems. This title shows how to estimate everything from how closely you can orbit a neutron star without being pulled apart by gravity, to the fuel used to transport your food from the farm to the store.Trade Review"This follow-up to the popular Guesstimation offers more on the joy of mathematical estimation, and inspiration for the budding analyst."--Nature "The books do a wonderful job at helping the reader to master the craft."--Cut the Knot Insights "A delightful volume... I hope to be able to use many of the tricks I learned in the future. I also hope to teach some of them to students. This would make a great secondary textbook in many classes, ranging from quantitative literacy to a science methods class for future educators. A careful study of this book would certainly improve a student's ability to take a complicated question, break it down into solvable parts, and assemble the parts to find an answer. Because this is quite close to what I want my students to do when faced with a difficult problem in pure mathematics as well, I consider this to be a very valuable book indeed."--Dominic Klyve, MAA Reviews "Guesstimation 2.0: Solving Today's Problems on the Back of a Napkin succeeds where most popular science literature so often fails. This is because it provides its readers with a scientific tool they can use immediately in their everyday lives... [Makes] an excellent addition for the casual scientist, job interviewee, or anyone hoping to impress their friends at a party."--Gabriel Thoumi, Mongabay.com "Readers who enjoyed Weinstein's first volume will be pleased with this instalment."--Choice "Guesstimation 2.0 is a book that was made to mediate between fun and useful... Whether or not a fan of numbers, it's always cool to appear smart, therefore Guesstimation 2.0 is an excellent element to add to one's arsenal."--Sarthak Shankar, Organiser "Certainly a good read for any teacher who enjoys numbers and the world around us."--Mark Hughes, Mathematics Teaching in the Middle School "Guesstimation's problems are fun and engaging in character, and the solutions are intuitive and well explained. Each problem and solution stands independently, and is about four pages long, making the book ideal for passing a quick ten minutes, and easy to pick up and put down. If, like me, you like ill-posed questions to have concrete answers then Guesstimation is definitely a good place to hone your estimation skills!"--Fionntan Roukema, Mathematical SpectrumTable of ContentsAcknowledgments xi Preface xiii 1 How to Solve Problems 1 2 General Questions 11 *2.1 Who unrolled the toilet paper? 13 *2.2 Money height 17 *2.3 Blotting out the Sun 19 *2.4 Really extra-large popcorn 21 *2.5 Building volume 25 *2.6 Mass of money 29 *2.7 A baseball in a glass of beer 33 *2.8 Life on the phone 37 *2.9 Money under the bridge 41 *2.10 Monkeys and Shakespeare 45 *2.11 The titans of siren 49 *2.12 Airheads at the movies 53 *2.13 Heavy cars and heavier people 55 *2.14 Peeing in the pool 59 3 Recycling: What Really Matters? 63 *3.1 Water bottles 67 *3.2 99 bottles of beer on the wall ... 71 *3.3 Can the aluminum 75 *3.4 Paper or plastic? 79 *3.5 Paper doesn't grow on trees! 83 *3.6 The rain in Spain ... 87 *3.7 Bottom feeders 91 *3.8 You light up my life! 95 4 The Five Senses 101 *4.1 Don't stare at the Sun 103 *4.2 Men of vision 105 *4.3 Light a single candle 109 *4.4 Oh say can you see? 113 *4.5 Bigger eyes 117 *4.6 They're watching us! 121 *4.7 Beam the energy down, Scotty! 125 *4.8 Oh say can you hear? 131 *4.9 Heavy loads 135 5 Energy and Work 139 *5.1 Power up the stairs 143 *5.2 Power workout 145 *5.3 Water over the dam 149 *5.4 A hard nut to crack 153 *5.5 Mousetrap cars 155 *5.6 Push hard 159 *5.7 Pumping car tires 161 *5.8 Pumping bike tires 165 *5.9 Atomic bombs and confetti 169 6 Energy and Transportation 173 *6.1 Gas-powered humans 177 *6.2 Driving across country 181 *6.3 Keep on trucking 185 *6.4 Keep on biking 189 *6.5 Keep on training 193 *6.6 Keep on flying 197 *6.7 To pee or not to pee 201 *6.8 Solar-powered cars 205 *6.9 Put a doughnut in your tank 209 *6.10 Perk up your car 213 *6.11 Don't slow down 217 *6.12 Throwing tomatoes 219 7 Heavenly Bodies 223 *7.1 Orbiting the Sun 227 *7.2 Flying off the Earth 229 *7.3 The rings of Earth 233 *7.4 It is not in the stars to hold our destiny 237 *7.5 Orbiting a neutron star 241 *7.6 How high can we jump? 245 *7.7 Collapsing Sun 249 *7.8 Splitting the Moon 253 *7.9 Splitting a smaller moon 257 *7.10 Spinning faster and slower 263 *7.11 Shrinking Sun 267 *7.12 Spinning Earth 271 *7.13 The dinosaur killer and the day 273 *7.14 The Yellowstone volcano and the day 277 *7.15 The orbiting Moon 281 *7.16 The shortest day 283 8 Materials 289 *8.1 Stronger than spider silk 291 *8.2 Beanstalk to orbit 295 *8.3 Bolt failure 299 *8.4 Making mountains out of molecules 303 *8.5 Chopping down a tree 307 9 Radiation 311 *9.1 Nuclear neutrinos 315 *9.2 Neutrinos and you 319 *9.3 Solar neutrinos 323 *9.4 Supernovas can be dangerous 327 *9.5 Reviving ancient bacteria 331 *9.6 Decaying protons 335 *9.7 Journey to the center of the galaxy 337 Appendix A * Dealing with Large Numbers 341 * A.1 Large Numbers 341 * A.2 Precision, Lots of Digits, and Lying 343 * A.3 Numbers and Units 345 Appendix B * Pegs to Hang Things On 347 Bibliography 351 Index 355

If one were to recommend a single fighter pilot biography ... this would be it.’ -- Britain at War'This book is probably the best biographical account I have read of anybody in any walk of life and I recommend it without reservation. Whilst the final comment from Doe, that he and his colleagues should not be seen as heroes but remembered for what they did, is probably a good reflection of the man but perhaps too modest, given the pivotal importance of the Battle of Britain and its place in history.' -- Royal Air Force Historical Society, Journal 65 (2017) pp. 129-131

Book SynopsisNow in its second edition, this book has been thoroughly updated to provide a current overview of the theoretical and experimental concepts needed to understand and work in nano-optics. This is an invaluable reference for graduate students entering the field, as well as for researchers and course teachers.Trade Review'The reader will appreciate its scope and depth, as it covers topics ranging from resolution and microscopy to metamaterials and optical antennas. This book provides an integrated approach to the entire field, and the format breaks the material into accessible sub-units. The physical and mathematical rigor is high, and approximations and limitations of the theory and the experimental devices are clearly stated. The material is highly recommended for a graduate course.' Barry R. Masters, Optics and Photonics News'This text responds to the growing importance of nanoscience, and presents a rare collection of topics across optics and microscopy at the nanoscale. • The Art and Science of Grazing: How Grass Farmers

Chelsea Green Publishing Co The Art and Science of Grazing: How Grass Farmers

    1 in stock

Book SynopsisGrazing management might seem simple: just put livestock in a pasture and let them eat their fill. However, as Sarah Flack explains in The Art and Science of Grazing, the pasture/livestock relationship is incredibly complex. If a farmer doesn’t pay close attention to how the animals are grazing, the resulting poorly managed grazing system can be harmful to the health of the livestock, pasture plants, and soils. Well-managed pastures can instead create healthier animals, a diverse and resilient pasture ecosystem, and other benefits. Flack delves deeply below the surface of “let the cows eat grass,” demonstrating that grazing management is a sophisticated science that requires mastery of plant and animal physiology, animal behavior, and ecology. She also shows readers that applying grazing management science on a working farm is an art form that calls on grass farmers to be careful observers, excellent planners and record-keepers, skillful interpreters of their observations, and creative troubleshooters. The Art and Science of Grazing will allow farmers to gain a solid understanding of the key principles of grazing management so they can both design and manage successful grazing systems. The book’s unique approach presents information first from the perspective of pasture plants, and then from the livestock perspective—helping farmers understand both plant and animal needs before setting up a grazing system. This book is an essential guide for ruminant farmers who want to be able to create grazing systems that meet the needs of their livestock, pasture plants, soils, and the larger ecosystem. The book discusses all the practical details that are critical for sustained success: how to set up a new system or improve existing systems; acreage calculations; paddock layout; fence and drinking water access; lanes and other grazing infrastructure; managing livestock movement and flow; soil fertility; seeding and reseeding pastures; and more. The author includes descriptions of real grazing systems working well on dairy, beef, goat, and sheep farms in different regions of North America. The book covers pasture requirements specific to organic farming, but will be of use to both organic and non-organic farms.Trade ReviewCHOICE- "This is a great book. After reading this work, the reviewer felt as if he could almost start his own grazing system; the title provides readers with the right questions to ask. Flack (a consultant on grazing and organic livestock) is a concise and articulate author and educator. She knows the value of telling a simple story and supporting it with relevant illustrations. She has an elegant style and knows how to use the power of repetition to show how no part of grazing management is wholly independent. She has biases with respect to the best grazing management, but is evenhanded in presenting multiple alternatives to grazing issues. Her case studies are aptly chosen to illustrate how the grazing management she advocates can be both sustainable and profitable. Each chapter plays a role and successively builds on the knowledge previously gained. As a manual for introducing good land stewardship, this book admirably succeeds. Summing Up: Highly recommended. All readers.”“I have long been fascinated by the logic of André Voisin’s system of Rational Grazing. Sarah Flack’s book has persuaded me that this could be a practical option for my own micro-dairy holding.”--Simon Fairlie, author of Meat“It gives me pleasure to recommend Sarah Flack’s The Art and Science of Grazing. Sarah offers sound practical information for management of pastures in humid environments. Her years of experience and study allow her to explain the limitations of rotational grazing that were first highlighted by Andre Voisin and to confirm the soundness of Voisin’s Rational Grazing.”--Allan Savory, president, Savory Institute“With feet firmly planted in both practice and science, Sarah Flack introduces pasture-based livestock production in a way that is sure to encourage and empower.”--Joel Salatin, author of Salad Bar Beef“The Art and Science of Grazing is a beautiful and highly useful book. Read it, learn how to manage pasture well, then do it! Sarah Flack’s good counsel can save your farm and family and bring you happiness. What else is there?”--Bill Murphy, author of Greener Pastures on Your Side of the Fence“Amidst the flood of information on modern grass farming, Sarah Flack performs nothing short of a rescue operation, distilling the art and science of grazing into an immensely useful book. Experienced hands will learn plenty, but newcomers won’t be overwhelmed. The Art and Science of Grazing is sure to become one of the most well-worn books on graziers’ bookshelves.”--Fred Walters, publisher, Acres U.S.A.“Sarah Flack has written a wonderful guide to sustainable grazing. She discusses fundamental principles and specific practices that make her book meaningful for anyone interested in the art and science of grazing.”--Fred Provenza, professor emeritus, Department of Wildland Resources, Utah State University “More and more farmers and ranchers are thirsting for information on animal husbandry that truly protects and regenerates natural resources while enhancing economic viability. Sarah Flack is answering the call. In a readable, user-friendly format, her book provides concrete information and plenty of inspiration. An invaluable resource for anyone raising grazing animals.”--Nicolette Niman, author of Defending Beef“Sarah Flack’s The Art and Science of Grazing is an excellent guide for anyone with an interest in the regenerative potential of livestock grazing done right. Whether you are a farmer, rancher, conscientious consumer of meat, or concerned citizen of the planet, Flack’s clear, concise prose explains how good grazing is a natural fit in our world.”--Courtney White, author of Two Percent Solutions for the Planet“Intelligently managed grazing has tremendous potential to mitigate climate turmoil, and The Art and Science of Grazing contains everything you need to know to do the very best job of grazing. Sarah Flack explores every aspect of holistic pasture management in a most delightful manner that will help all who consult her book, from beginners to the most experienced graziers, to achieve their maximum potential in healing the Earth with livestock and land.”--Jack Lazor, author of The Organic Grain Grower“The Art and Science of Grazing is a comprehensive guide for new and experienced graziers. If I had to choose one book as a reference on grazing for both new and experienced livestock graziers, this would be it. The book is well organized, containing many excellent illustrations and beautiful photographs. Sarah Flack shares her knowledge on all aspects of grazing with emphasis on key principles that apply to all farms in humid regions. Multiple case studies provide interest and wisdom gained by farmers who have developed diverse, successful grazing operations throughout the country.”--Guy Jodarski, DVM, CROPP Cooperative/Organic Valley

Book SynopsisThe Adjustable Spanner is the product of thirty years' collecting and original research, fired by Ron Geesin's acquisition of the SLIK adjustable spanner that hung in his father's garage. At the core of this book is a concise history of this much-maligned tool. Serious and comical observations parallel its chequered life, from its bent beginnings in the blacksmith's shop to over-designed and lovingly engineered treasures from the small Birmingham machinist. Around this core are discussions and findings about components and construction on the practical side, and patents, registered designs and trade marks on the design protection side. Emerging from history, we take a closer look at uses and especially abuses, immerse ourselves in an analysis of types and styles, and dive deeply into the histories of the inventors and makers. You will be amazed at the engineering diversity required to produce these most fanciful but essential supports to the Industrial Revolution.Trade ReviewThe adjustable spanner is a much maligned tool producing many barked knuckles and rounded nuts but Ron Geesin reveals so much of what has gone into this particular ‘fits-all’ tool. To my mind this book has it all: human drama, technological change and wide ranging variety of data and photos. Definitely one for anyone with a curious mind, who wants to know why and when. • Garlic and Other Alliums: The Lore and The

Royal Society of Chemistry Garlic and Other Alliums: The Lore and The

    1 in stock

Book SynopsisThe name "Allium" is said to come from the Greek word to avoid because of its offensive smell. The genus Allium includes more than 800 species of which only a few have been cultivated as foods. Many of the other members of this genus are popular with gardeners as easy to maintain perennials, although the smell of some members of the genus can be off-putting. The smell is a consequence of breakdown of sulfur-containing compounds which is a characteristic of this family of plants. Garlic, onions, leeks, chives and other members of the genus Allium occupy a unique position both as edible plants and herbal medicines, appreciated since the dawn of civilization. Alliums have been featured through the ages in literature, where they are both praised and reviled, as well as in architecture and the decorative arts. Garlic pills are top-selling herbal supplements while garlic-based products show considerable promise as environmentally friendly pesticides. The remarkable properties of the alliums can be understood based on the occurrence of a number of relatively simple sulfur-containing chemical compounds ingeniously packaged by nature in these plants. This unique book, with a foreword by 1990 Nobel Laureate E.J. Corey, outlines the extensive history and the fascinating past and present uses of these plants, sorting out fact from fiction based upon detailed scrutiny of historic documents as well as numerous laboratories studies. Readers will be entertained and educated as they learn about early cultivation of garlic and other alliums while being introduced to the chemistry and biochemistry. They will learn how alliums have been portrayed and used in literature, poetry, the arts and how alliums are featured in the world's oldest cookbook. Technical material is presented in a manner understandable to a general audience, particularly through the use of illustrations to simplify more difficult concepts and explain how experimental work is conducted. The book is heavily illustrated with examples of alliums in art, literature, agriculture, medicine and other areas and includes rare botanical drawings of many members of the genus Allium. Essential reading for anyone with a general interest in science, the book is written at a level accessible to experts and non-experts alike. It has sufficient additional detail and references to satisfy both those wanting to know more, as well as researchers in disciplines as diverse as archaeology, medicine, ecology, pharmacology, food and plant sciences, agriculture, and organic chemistry.Trade ReviewThis book brings to mind the poet Horace's formula for successful writing: He wins every hand who mingles profit with pleasure, by delighting and instructing the reader at the same time. Eric Block has certainly mixed the useful and the sweet in his book.I started BlockÆs book as a reviewer and became an admirer. Chem. Int. Ed., 2010, 49, 2 *'There is some fascinating chemistry told here. Both the chemistry itself and the story of its revelation are given in detail.Within the book there are some fascinating anecdotes - a town in America where it is illegal to attend a theatre after eating raw onions, the resigned reflection that despite its benefits 'garlic mouthwash is unlikely to be a winning consumer product' and the warning that garlic in your socks will come out on your breath. Now there's an experiment any of us can try.' -- David Quick * Education in Chemistry *'...enjoyment of this book should not be limited to scientists. The book is a virtual encyclopedia of garlic and onion facts, and while it may make a necessary addition to the food chemistÆs library, it is something that any foodie, especially a garlic lover, can enjoy.' -- Thomas J Mansell * Food and Foodways, 18: 3, 170-172 *This is a fascinating book written by an authority on the chemistry of the edible alliums, which include garlic, onions, leeks and chives. The book is well written and up-to-date. I can thoroughly recommend this book not just to natural product chemists but also to all those who have grown these plants in the garden or enjoyed eating them. It contains many anecdotes and quotations to enliven a chemist's dinner party. -- Jim Hanson * Chemistry World *What do garlic and onions have in common with gunpowder? A lot. TheyÆre incendiary. They can do harm and they delight. Sulfur is central to their powers. And they helped inspire the work of a chemist who has just published a welcome treatise on the smelly yet indispensable allium family. Dr. BlockÆs book may be the definitive word on the alliums for the moment, but as it and he make clear, there are new flavors to look forward t. -- Harold McGee * The New York Times *This book by Eric Block is a synthesis of his four decades of distinguished work with alliums. His account of this ever-increasing knowledge is accessible and will even entertain readers without a deep knowledge of chemistry.Block may look at the world through garlic-tinged lenses, but in this book he is very good at getting readers to see it his way -- Meriel Jones * Chemistry and Industry *Table of Contents1. Book SynopsisRudolf Steiner, the often undervalued, multifaceted genius of modern times, contributed much to the regeneration of culture. In addition to his philosophical teachings, he provided ideas for the development of many practical activities including education--both general and special--agriculture, medicine, economics, architecture, science, religion, and the arts. Today there are thousands of schools, clinics, farms, and many other organizations based on his ideas. Steiner's original contribution to human knowledge was based on his ability to conduct spiritual research, the investigation of metaphysical dimensions of existence. With his scientific and philosophical training, he brought a new systematic discipline to the field, allowing for conscious methods and comprehensive results. A natural seer from childhood, he cultivated his spiritual vision to a high degree, enabling him to speak with authority on previously veiled mysteries of life. Topics include: the evolving human being; cosmos as the source of life; plants and the living earth; farms and the realms of nature; bringing the chemical elements to life; soil and the world of spirit; supporting and regulating life processes; spirits of the elements; nutrition and vitality; responsibility for the future.

Book SynopsisThe provision of sustainable energy supplies for an expanding and increasingly productive world is one of the major issues facing civilisation today. Renewable Energy examines both the practical and economic potential of the renewable energy sources to meet this challenge. The underlying physical and technological principles behind deriving power from direct solar (solar thermal and photovoltaics), indirect solar (biomass, hydro, wind and wave) and non-solar (tidal and geothermal) energy sources are explained, within the context of their environmental impacts, their economics and their future prospects. Renewable Energy provides both perspective and detail on the relative merits and state of progress of technologies for utilizing the various ''renewables''. The analysis considers emissions, sustainability, cost implications and energy security, as political and economic pressures move society towards a low-carbon future. From an overview of basic energy conversion processes, throughTrade ReviewReview from previous edition I have reviewed many textbooks on renewable energy and this one stands clearly above them all. It provides an excellent balance between technical content and practical application. * Douglas J Reinemann, Professor of Biological Systems Engineering, University of Wisconsin-Madison, USA *The quality of illustrations in Renewable Energy , as well as the inclusion of energy data for North America, make this and its sister volume, Energy Systems and Sustainability , my top choice for any energy program in higher education. * James Leidel, Director of Clean Energy Syctems, Oakland University, USA *A great introductory text for teaching, and an excellent reference for your bookshelf. * Ian Mason, University of Canterbury, NZ *An excellent overview of all the principal renewable energy technologies, placing them in the context of the overall power system. Individual chapters are all written by experts, but edited into a common style so that the level of detail is comparable across all chapters. The best book of its sort on the market. * Paul Younger, University of Glasgow *Excellent textbook for an introductory course on renewable energy systems. Some mathematical principles are introduced to reinforce concepts. • The Bread Builders: Hearth Loaves and Masonry

    5 in stock

Book SynopsisCreating the perfect loaf of bread--a challenge that has captivated bakers for centuries--is now the rage in the hippest places, from Waitsfield, Vermont, to Point Reyes Station, California. Like the new generation of beer drinkers who consciously seek out distinctive craft-brewed beers, many people find that their palates have been reawakened and re-educated by the taste of locally baked, whole-grain breads. Today's village bakers are finding an important new role--linking tradition with a sophisticated new understanding of natural levens, baking science and oven construction. Daniel Wing, a lover of all things artisanal, had long enjoyed baking his own sourdough bread. His quest for the perfect loaf began with serious study of the history and chemistry of bread baking, and eventually led to an apprenticeship with Alan Scott, the most influential builder of masonry ovens in America. Alan and Daniel have teamed up to write this thoughtful, entertaining, and authoritative book that shows you how to bake superb healthful bread and build your own masonry oven. The authors profile more than a dozen small-scale bakers around the U.S. whose practices embody the holistic principles of community-oriented baking based on whole grains and natural leavens. The Bread Builders will appeal to a broad range of readers, including: Connoisseurs of good bread and good food. Home bakers interested in taking their bread and pizza to the next level of excellence. Passionate bakers who fantasize about making a living by starting their own small bakery. Do-it-yourselfers looking for the next small construction project. Small-scale commercial bakers seeking inspiration, the most up-to-date knowledge about the entire bread-baking process, and a marketing edge. Trade ReviewReview from Ecology Action Newsletter- The Bread Builders: Hearth Loaves and Masonry Ovens, by Daniel Wing and Alan Scott, is a serious book, written for people who take their bread baking seriously. It is not a cookbook but one whose object is to help the baker understand all parts of the process that go into creating an excellent loaf. As such, it is a technical journal that thoroughly details natural fermentation, bread grains and flours, leavens and dough, and dough development. The second part is about masonry ovens and their construction, since both authors agree that such an oven is a necessary part of creating the excellent loaf. Each chapter of the book includes a visit to a commercial or private venture which is using some or all of the processes being described. The book is not a light read but should prove inspiring to those wanting more information about the baking process, how to construct a masonry oven or anyone who is glad to see that these traditional methods are being nurtured rather than forgotten."This book is ice cream for a baker! Book SynopsisRobots may one day rule the world, but what is a robot-ruled Earth like? Many think the first truly smart robots will be brain emulations or ems. Scan a human brain, then run a model with the same connections on a fast computer, and you have a robot brain, but recognizably human.Train an em to do some job and copy it a million times: an army of workers is at your disposal. When they can be made cheaply, within perhaps a century, ems will displace humans in most jobs. In this new economic era, the world economy may double in size every few weeks. Some say we can''t know the future, especially following such a disruptive new technology, but Professor Robin Hanson sets out to prove them wrong. Applying decades of expertise in physics, computer science, and economics, he uses standard theories to paint a detailed picture of a world dominated by ems. While human lives don''t change greatly in the em era, em lives are as different from ours as our lives are from those of our farmer and forager Trade ReviewHanson's predictions detail a world both uncanny and eerily familiar. * Mary Craig, Nature *Plenty of futurists and science fiction writers have toyed with the idea that the brains of particular humans could one day be scanned and uploaded into artificial hardware but Prof Hanson's take is different. His aim is to use standard theories from the physical, human and social sciences to make forecasts about how this technological breakthrough would really change our world * Sarah O' Connor, Financial Times *What is remarkable ... is not just the detail ... but the way he situates it within a perceptive analysis of our human past and present * Daniel J. Levitin, Wall Street Journal Europe *What happens when a first-rate economist applies his rigor, breadth, and curiosity to the sci-fi topic of whole brain emulations? This book is what happens. • The Eye of War: Military Perception from the

University of Minnesota Press The Eye of War: Military Perception from the

Book SynopsisHow perceptual technologies have shaped the history of war from the Renaissance to the present From ubiquitous surveillance to drone strikes that put “warheads onto foreheads,” we live in a world of globalized, individualized targeting. The perils are great. In The Eye of War, Antoine Bousquet provides both a sweeping historical overview of military perception technologies and a disquieting lens on a world that is, increasingly, one in which anything or anyone that can be perceived can be destroyed—in which to see is to destroy. Arguing that modern-day global targeting is dissolving the conventionally bounded spaces of armed conflict, Bousquet shows that over several centuries, a logistical order of militarized perception has come into ascendancy, bringing perception and annihilation into ever-closer alignment. The efforts deployed to evade this deadly visibility have correspondingly intensified, yielding practices of radical concealment that presage a wholesale disappearance of the customary space of the battlefield. Beginning with the Renaissance’s fateful discovery of linear perspective, The Eye of War discloses the entanglement of the sciences and techniques of perception, representation, and localization in the modern era amid the perpetual quest for military superiority. In a survey that ranges from the telescope, aerial photograph, and gridded map to radar, digital imaging, and the geographic information system, Bousquet shows how successive technological systems have profoundly shaped the history of warfare and the experience of soldiering. A work of grand historical sweep and remarkable analytical power, The Eye of War explores the implications of militarized perception for the character of war in the twenty-first century and the place of human subjects within its increasingly technical armature.Trade Review"This wonderfully erudite genealogy of the increasingly precise ways in which the linkage of military perception and weaponry has brought us to the point where being detected puts one within a spatio-temporally fine-grained ‘kill box’ is fascinating and important. Ranging over hundreds of years of documents, beginning with telescopes and ending with the overlap of light and death in the laser, Bousquet’s work will be both at the forefront of security studies and a crucial addition to the knowledge base of concerned citizens."—John Protevi, author of Life, War, Earth: Deleuze and the Sciences"The Eye of War is a masterful contemporary history of the martial gaze that reviews the relation between seeing and targeting. The expansion of ocularcentrism—the ubiquitization of vision as power—Antoine Bousquet shows us, coincides with the inverse: the relegation of the eye to an instrument of a war order that relies on the sensorium as the means to its own ends. As he traces the development of a technocracy of military vision, Bousquet discloses the vision of a military technocracy that has transformed the given world into units of perception indistinct from ‘kill boxes.’"—Daniel Bertrand Monk, Colgate University"This book dives deeply back into history of canonic studies of perspective and projective geometry, recognised as founding methods for further the rationalisation of visions and mathematization of space, as well as introducing the first technologies of space-measuring as distance meter. Book SynopsisThe riveting exploits of a fighter aircraft – and an underrated aerial hero of the Second World WarThe Hawker Hurricane was flying on the outbreak of war in 1939. Six years later, having saved Britain, it was still playing a major part in the war effort.Widely remembered in its fighter role and unjustly left in the shade of the Spitfire, the Hurricane’s role was varied and pivotal: as a fighter, fighter-bomber, anti-tank aircraft and used at sea. Nor was its theatre of operations any less wide: it saw action in France from the beginning of the Phoney War to the outbreak of the Blitzkrieg, in the Battle of Britain, and then as far afield as Russia, Sumatra and Madagascar. In this intensely readable, spirited and classic account, Adrian Stewart describes all the Hurricane’s roles, adventures and achievements. He recounts the exploits of the aircraft’s outstanding pilots who contributed so much towards mastery of the skies and eventual victory.Perfect for readers of John Nichol’s Spitfire and Lancaster.

Book SynopsisFrom abandoned structures that have long ceased to take you anywhere to today’s feats of engineering, Bridges is a pictorial celebration of 150 suspension bridges, iron bridges, stone bridges, aqueducts, viaducts, railway bridges, footbridges and rope bridges. Organised in sections such as abandoned bridges, classic bridges and superstructures, the book contains an immense range of wooden, stone, iron, steel and concrete bridges. There are tiny village bridges and vast bridges, narrow bridges and motorway-wide bridges, bridges that act as dams and bridges that support buildings, covered bridges, famous bridges and little-known gems. From San Francisco’s Golden Gate bridge to the 21st century Millau Viaduct in France – the tallest bridge in the world, from the Roman aqueduct in Segovia, Spain, to farmers still building bamboo bridges, the book draws examples from all over the world. Ranging from the Rocky Mountains to Siberia and Iran, a picture emerges of not only how new technologies have made it possible for bridges to be built, but also how bridges have themselves been catalysts for social change. And when they have been abandoned, such as in former gold rush towns, these bridges tell their own stories of how the world moves on. Presented in a landscape format and with 150 outstanding colour photographs, Bridges is a stunning collection of images.Table of ContentsContents to include Ancient and Medieval bridges, 62 BCE–1499 Kapellbrücke (Chapel Bridge), Lucerne, Switzerland Ponte Fabricio, Rome, Italy Puente Trajan (Trajan's Bridge) Alcántara, Estremadura, Spain Ponte di Tiberio (Tiberius Bridge), Rimini, Italy Acueducto de los Milagros (Aqueduct of the Miracles), Mérida, Spain Pont du Gard, Nîmes, France Puente Romano (Roman Bridge), Córdoba, Spain Segovia Aqueduct, Spain Segura Aqueduct, Castelo Branco, Portugal Adana Roman Bridge, Turkey Ponte Sant' Angelo, Rome, Italy Aqueduct of Valens, Istanbul, Turkey Malabadi Bridge, Diyarbakir Province, Turkey Anji (Zhaozhu) Bridge, Hebei Province, China Dicle Bridge, Diyarbakir, Turkey Puente la Reina (Queen's Bridge), Navarre, Spain Pont Vieux (Old Bridge), Albi, France Puente Viejo (Old Bridge), Besalú, Catalonia, Spain High Bridge, Lincoln, England Lugou or Marco Polo Bridge, Beijing, China Vieux Pont (Old Bridge), Béziers, France Hasankeyf Bridge, Anatolia, Turkey Salahin Bridge, Alaverdi, Armenia Citadel Bridge, Aleppo, Syria Ponts Couverts, Strasbourg, France Monnow Bridge, Monmouth, Wales Starý Most (Old Bridge), Písek, South Bohemia, Czech Republic Ponte Castelvecchio, Verona, Italy Kraemerbrücke (Merchant's Bridge), Erfurt, Germany Pont Valentré, Cahors, France Puente de San Martin, Toledo, Spain Puente de Frías, Burgos Province, Spain Ponte Vecchio (Old Bridge), Florence, Italy Ponte Visconti, Valeggio sul Mincio, Italy Kasteel Doorwerth, Gelderland, Netherlands Obere Brücke (Upper Bridge), Bamberg, Germany Karlův Most (Charles Bridge), Prague, Czech Republic The Early Modern Period, 1500-1700 Brig o' Doon, Alloway, Scotland Slaters' Bridge, Cumbria, England Old Bridge, Stirling, Scotland Dyavolski Most (Devil's Bridge), Ardino, Bulgaria Bar Aqueduct, Stari Bar, Montenegro Stari Most ('Old Bridge'), Mostar, Bosnia-Herzegovina Essex Bridge, Shugborough, England Padre Tembleque Aqueduct, Tepeyahualco, Mexico Mehmed Paša Sokolović Bridge, Visegrad, Bosnia-Herzegovina Ponte dei Tre Archi, Venice, Italy Puente de Segovia, Madrid, Spain Seher-Cehajina Ćuprija (Governor's Bridge), Sarajevo, Bosnia-Herzegovina Japanese Covered Bridge, Hoi An, Vietnam Ponte di Rialto, Venice, Italy Stara Ćuprija (Old Bridge), Konjic, Bosnia-Herzegovina Malmsmead Bridge, Oare, Somerset, England Yulong Bridge, Yangshuo, China Shaharah Bridge, Yemen Ponte dei Sospiri (Bridge of Sighs), Venice, Italy Si-o-se Pol (33-Arch Bridge), Isfahan, Iran Pont Neuf, Paris, France Puente de Piedra (Stone Bridge), Zamora, Spain Arta Bridge, Arachthos River, Greece Somerset Lifting Bridge, Bermuda Gongchen Bridge, Hangzhou, China Korenbeursbrug (Cornmarket Bridge), Leiden, Netherlands Pol e-Khaju (Khaju Bridge), Isfahan, Iran Watendlath Bridge, Cumbria, England Kintai Bridge, Iwakuni, Japan Eighteenth and Nineteenth Century Bridges Puente Nuevo (New Bridge), Ronda, Spain Holzbrücke (Wooden Bridge), Bad Säckingen, Germany Luding Chain Bridge, China The 'Seventeen Hole' Bridge, Beijing, China Arcos da Lapa, Rio de Janeiro, Brazil Puente de Toledo, Madrid, Spain Lejonströmsbron (Lejonström Bridge), Skellefteå, Sweden Venedictos Bridge, Grevena Prefecture, Greece Jade Belt Bridge, Beijing, China Pulteney Bridge, Bath, England Figured Bridge, Tsaritsyno Park, Moscow, Russia Siberian Marble Gallery, Tsarskoe Selo, Russia The Iron Bridge, Ironbridge, England Lomonosov Bridge, St Petersburg, Russia Alte Brücke (Old Bridge), Heidelberg, Germany Pont de la Concorde, Paris, France Halfpenny Bridge, Lechlade, England Puente Nuevo (New Bridge), Ronda, Spain Norrbro (North Bridge), Stockholm, Sweden Old Bridge, Bewdley, England Pontcysyllte Aqueduct, Llangollen, Wales Ha'penny Bridge, Dublin, Ireland Sligachan Old Bridge, Isle of Skye, Scotland Conwy Suspension Bridge, Conwy, Wales Pont de Pierre (Stone Bridge), Bordeaux, France Kilenclyukú Híd (Nine-Hole Bridge), Hortobágy National Park, Hungary Széchenyi Bridge, Budapest, Hungary Royal Border Bridge, Berwick, England U Bein Bridge, Amarapura, Myanmar Bridge of Sighs, Cambridge, England 'Bridge of Lies', Sibiu, Romania Rakotzbrücke, Park Kromlau, Germany Huc Bridge, Hanoi, Vietnam Clifton Suspension Bridge, Bristol, England Konitsa Bridge, Greece Kuldiga Bridge, Latvia Margit Híd (Margaret Bridge), Budapest, Hungary Brooklyn Bridge, New York, USA Capilano Suspension Bridge, Vancouver, Canada Flume Covered Bridge, New Hampshire, USA Forth Railway Bridge, Scotland Lispole Viaduct, Kerry, Ireland Tower Bridge, London, England Twentieth Century Bridges Tower Bridge, Sacramento, USA Mexican Canyon Trestle, New Mexico, USA Victoria Falls Bridge, Zimbabwe/Zambia Solkan Bridge, Slovenia, Europe Glienicke Bridge, Germany Yutengping Bridge, Taiwan Zverynas Bridge.
