Book SynopsisThe authors of The Perfect Meal examine all of the elements that contribute to the diner's experience of a meal (primarily at a restaurant) and investigate how each of the diner's senses contributes to their overall multisensory experience.Trade Review"This book is in a class by itself. If you thought taste was located on your tongue, then this unique book will disabuse you of that notion and reveal how both eating and cooking are extraordinarily rich multisensory experiences." (New York Journal of Books, 1 November 2014) "Their exhaustive analyses of everything from plate size to flavour incongruities are laced with details such as cutlery's evolution from Victorian marrow scoops and chocolate muddlers to today's textured spoons and 'aromatic forks.'" (Nature, 30 October 2014) "The Perfect Meal can't fail to entertain, inform and ultimately to dazzle."—Heston Blumenthal, chef and owner of The Fat Duck "Not many people are as ready to realise the importance of the senses, not only in cooking but in eating, as Charles Spence and Betina Piqueras-Fiszman ...This book demonstrates beyond doubt that gastronomy is the most complex creative discipline that exists."—Ferran Adrià, elBullifoundation "Focusing on the brain's interpretation of our eating experience, pioneers Spence and Piqueras-Fiszman acknowledge the interdisciplinary nature of gastronomy, rendering a complex area of study both digestible and applicable."—Ben Reade, Gastronome and Head of Culinary Research and Development at Nordic Food Lab "The Perfect Meal goes beyond the exotic ingredients and creative insights of the chef and into the realm of the diner’s psychology. Using an accessible writing style that neither talks down to the reader nor dumbs down the science, the authors take us into the relatively unexplored world of the dining context: the gastrophysics of the visual, acoustic, tactile – not to mention taste and smell – influences that we are exposed to in every dining experience. This is a new approach to thinking about dining that will appeal to and inform anyone who has ever been convinced to buy a cookbook by its illustrations or who persists, despite failure, to try to get a booking at The Fat Duck."—John Prescott, Ph.D, author of Taste Matters: Why We Eat the Foods We Do "Nowadays a great many chefs are realising that science also has a place at the table; that a dining experience is made up of far more than just good food. By understanding how we use our senses to interact with and appreciate food we may be able to further enhance our guests' dining experiences. This book looks at many topics which will become increasingly relevant to both chefs and our food culture as a whole in the coming years." — Jozef Youseff, chef and author of Molecular Gastronomy at Home (www.kitchen-theory.com) "...packed with insights that are fascinating to anyone in possession of an appetite."—Amy Fleming, The Guardian "One thing is for sure, after reading this book eating out will never be the same again...."—The Oxford Martin Programme on the Future of FoodTable of ContentsForeword xiii Preface xvii 1 Introducing the Perfect Meal 1 1.1 Introduction 1 1.2 A brief history of culinary movements 2 1.2.1 Nouvelle Cuisine 2 1.2.2 The rise of molecular gastronomy 3 1.2.3 Molecular gastronomy or modernist cuisine? 5 1.2.4 On the rise of the celebrity chef 7 1.3 The search for novelty and surprise 8 1.3.1 The taste of expectation 10 1.3.2 Food as theatre: the multisensory experience economy meets cuisine 11 1.4 The brain on flavour 12 1.4.1 Neurogastronomy 12 1.4.2 Do neurogastronomists make great-tasting food? 14 1.5 Food and the perception of everything else 16 1.6 Gastrophysics: the new science of the table 18 1.7 Food perception is fundamentally multisensory 21 1.8 Isn’t modernist cuisine only for the lucky few? 22 1.9 Amuse bouche 25 References 27 2 Let the Show Commence: On the Start of the Perfect Meal 37 2.1 Introduction 37 2.1.1 Mood food 38 2.2 On the social aspects of dining 42 2.2.1 Waiting staff 42 2.2.2 The company 44 2.3 On the design of the menu 47 2.3.1 Scanning the menu: ‘Oysters, steak frites, field greens, oysters…’ 48 2.3.2 ‘This dessert is literally calling me’ 50 2.3.3 Images on the menu 52 2.3.4 On a diet? Book SynopsisA leading artificial intelligence researcher lays out a new approach to AI that will enable us to coexist successfully with increasingly intelligent machinesIn the popular imagination, superhuman artificial intelligence is an approaching tidal wave that threatens not just jobs and human relationships, but civilization itself. Conflict between humans and machines is seen as inevitable and its outcome all too predictable. In this groundbreaking book, distinguished AI researcher Stuart Russell argues that this scenario can be avoided, but only if we rethink AI from the ground up. Russell begins by exploring the idea of intelligence in humans and in machines. He describes the near-term benefits we can expect, from intelligent personal assistants to vastly accelerated scientific research, and outlines the AI breakthroughs that still have to happen before we reach superhuman AI. He also spells out the ways humans are already finding to misuse AI, from lethal autonomous weapons to viral sabotage. If the predicted breakthroughs occur and superhuman AI emerges, we will have created entities far more powerful than ourselves. How can we ensure they never, ever, have power over us? Russell suggests that we can rebuild AI on a new foundation, according to which machines are designed to be inherently uncertain about the human preferences they are required to satisfy. Such machines would be humble, altruistic, and committed to pursue our objectives, not theirs. This new foundation would allow us to create machines that are provably deferential and provably beneficial.

  • Climate Change and Infectious Fish Diseases

CABI Publishing Climate Change and Infectious Fish Diseases

    1 in stock

Book SynopsisClimate change with global warming is not disputed by the vast majority of scientists and the aquatic system is most affected. A global rise in water temperature and acidification of the aquatic environment will continue even if we can significantly reduce the current output of the two most important greenhouse gasses (carbon dioxide and methane). These and other environmental changes will affect fish health which includes infectious pathogens. This important new text is the second volume on climate change and fish health. It covers changes to the freshwater ecosystem and their current and expected effects on selected infectious diseases of fish. The book represents contributions by over 50 experts from 18 countries. Comprehensive and thought-provoking, the book details abiotic and biotic environmental changes in temperate and tropical freshwater ecosystems, sequestrations of atmospheric carbon dioxide and effects on infectious diseases (12 microbial and 10 parasitic) in economically important fish in tropical, subtropical and temperate waters. A staple of modern British life, the seaside getaway was intertwined with the train, in whose compartments holidaymakers were shunted from smog-choked cities to sandy coves. With his signature wit and anecdotal style, Andrew Martin captures an era defined by its railways: fromthe development of Brighton and Scarborough into pleasure resorts, and the introduction of bankholidays and two-day weekends, to the advent of cheap flights and the British coast's subsequentdecline. Humorous and evocative, To the Sea by Train takes a charming tour through Britain's mostbeloved pastime.

Consequently, the appearance of a new type of regular light infantry soldier and an innovative military firearm, the rifle, marked a new age in the history of warfare. During the 18th century both Austria and Prussia fielded light troops armed with rifled firearms, while conflicts in North America involved the deadly long rifle and the innovative Ferguson breech-loader. Rifle-armed specialists also fought for several nations during the Napoleonic Wars. Batsford Ltd Bojagi - Korean Textile Art: technique, design

    1 in stock

Book SynopsisAn exploration of traditional Koran textile art techniques. Bojagi, sometimes called Pojagi, is a traditional Korean textile art. Centuries old, it was originally textiles made for every day living with scraps of left-over fabrics artfully put together. They often resemble works of modern artists such as Mondrian and Klee. Today, the technique now produces beautiful textiles that are fast influencing textile art in the West, particularly amongst quilters. Using her own work and the work of other artists, leading expert on the subject Sara Cook demonstrates the techniques and how modern textilers can interpret the principles of Bojagi creatively in exciting new work. The book covers a brief history and understanding of Bojagi in Korean culture, then covers: Fabrics and sewing equipment (incl. silk, hemp and ramie); Obanseak – technique and designs of bojagi colours and symbolism; Colour Seams and Embellishments; and Jagokbo – textiles pieced from tiny scraps. A beautiful book that offers textile artists and quilters a range of ideas to use i their own work. As with the obsession with Shibori, this technique brings one of the East's most creative textiles to a Western audience for the first time.

Chelsea Green Publishing Co Fibershed: Growing a Movement of Farmers, Fashion

    1 in stock

Book SynopsisA new "farm-to-closet" vision for the clothes we wear--by a leader in the movement for local textile economies There is a major disconnect between what we wear and our knowledge of its impact on land, air, water, labor, and human health. Even those who value access to safe, local, nutritious food have largely overlooked the production of fiber, dyes, and the chemistry that forms the backbone of modern textile production. While humans are 100 percent reliant on their second skin, it’s common to think little about the biological and human cultural context from which our clothing derives. Almost a decade ago, weaver and natural dyer Rebecca Burgess developed a project focused on wearing clothing made from fiber grown, woven, and sewn within her bioregion of North Central California. As she began to network with ranchers, farmers, and artisans, she discovered that even in her home community there was ample raw material being grown to support a new regional textile economy with deep roots in climate change prevention and soil restoration. A vision for the future came into focus, combining right livelihoods and a textile system based on economic justice and soil carbon enhancing practices. Burgess saw that we could create viable supply chains of clothing that could become the new standard in a world looking to solve the climate crisis. In Fibershed readers will learn how natural plant dyes and fibers such as wool, cotton, hemp, and flax can be grown and processed as part of a scalable, restorative agricultural system. They will also learn about milling and other technical systems needed to make regional textile production possible. Fibershed is a resource for fiber farmers, ranchers, contract grazers, weavers, knitters, slow-fashion entrepreneurs, soil activists, and conscious consumers who want to join or create their own fibershed and topple outdated and toxic systems of exploitation..Trade Review“Collectively, we’ve been slowly waking up to the urgent need to farm our food in ways that restore and regenerate soils and whole landscapes; create connections between people, land, animals, and seasons; and rebuild local economies. Fibershed turns our attention to a parallel, equally urgent frontier: our clothes. We need this book, and we need it now.”—Nicolette Hahn Niman, author of Defending Beef“Fibershed is a must-read for all clothing brands, whether years into their sustainability journey or just at the beginning. Burgess encourages us to think deeply and holistically about the impacts of fashion, reconsider our industry’s model of overconsumption, and to approach flashy biotech solutions with a critical eye. Fibershed proves that fashion can be a force for good, empowering farmers and makers while supporting local communities with Climate Beneficial textile supply chains.”—Megan Meiklejohn, Sustainable Materials and Transparency Manager, Eileen Fisher“Fibershed is a deeply informed exploration of the political ecology of clothing and an urgent invitation to a new way of being in the world; one that respects the soil, the cycles of the year, and life itself. In this visionary manifesto of hope, Rebecca Burgess chronicles a personal journey with profound global implications: Human economies need not result in the degradation of either human culture nor the environment, but might, if done well, lead to the enrichment of both.”—Jeffrey Creque, PhD, Director of Rangeland and Agroecosystem Management, Carbon Cycle Institute“This is an important book. It is bold, practical, optimistic––a vision of how things must be.”—Kate Fletcher, professor, Centre for Sustainable Fashion, University of the Arts, London, UK“Rebecca has made an incredible contribution to the slow fashion movement through her organizing and advocacy work with the Fibershed organization. I’m thrilled to know that this work is now available to a broader audience through this thoughtful book. May we all learn from her wisdom, research, and knowledge as we create even deeper connections between farms, fiber art, and fashion.”—Katrina Rodabaugh, author of Mending Matters“We clothe ourselves using fibers from cotton, trees, animals, and oil. The sins of oil-based fibers are well known, but lesser known are those of plant- and animal-based fiber production—themselves major contributors to global desertification and climate change. If we want to offer hope to future generations, we will have to root not only the food we eat, but the clothing we wear in a new, regenerative agriculture that manages livestock using the holistic planned grazing process. Fortunately, movement in this direction is underway. Rebecca Burgess’s well-researched book stokes a fire that has already been lit by many organizations collaborating and networking around the globe, and connects the dots between our clothing and our life-supporting environment. I would encourage everyone who wears clothes and has any concern for future generations to read this highly educational book.”—Allan Savory, president and cofounder, Savory Institute“Rebecca Burgess is the Alice Waters of the slow fiber movement. Within the pages of Fibershed, she proves that carefully clothing oneself is a revolutionary act. While many wait for distant corporations and governments to curb toxic, unethical, and extractive industrial practices, Burgess demonstrates that the revolution is at hand in our own backyards. Fibershed is required reading for any clothing company that claims environmental and ethical responsibility.”—Dan Malloy, surfing ambassador, Patagonia; cofounder, Poco Farm, Ojai, CA“Fibershed is a story of vision, persistence, and kindness. With patience and grace, Rebecca has restored a sense of gratitude for the overlooked grasses and herbaceous plants that were once our second skin. From the living world around her, she has stitched together the broken strands of textile arts, creating an economy of place where makers are artists and clothing is revered.”—Paul Hawken, author of Blessed Unrest; editor of Drawdown

Book Synopsis'VISIONARY' Stephen GreenblattHarvard's top astronomer takes us inside the mind-blowing story of the first interstellar visitor to our solar system In late 2017, scientists at a Hawaiian observatory glimpsed a strange object soaring through our inner solar system. Astrophysicist Avi Loeb conclusively showed it was not an asteroid; it was moving too fast along a strange orbit, and leaving no trail of gas or debris in its wake. There was only one conceivable explanation: the object was a piece of advanced technology created by a distant alien civilization. In Extraterrestrial, Loeb takes readers inside the thrilling story of the first interstellar visitor to be spotted in our solar system. He outlines his theory and its profound implications: for science, for religion, and for the future of our planet. A mind-bending journey through the furthest reaches of science, space-time, and the human imagination, Extraterrestrial challenges readers to aim for the stars-and to think critically about what's out there, no matter how strange it seems.Trade ReviewI have a lot of time for Loeb. He has a joy in conjecture and an omnivorous spirit of inquiry that are more reminiscent of 20th-century thinkers such as Freeman Dyson or Carl Sagan than most of his peers. His readiness to stake his reputation on such an unconventional hypothesis is a mark of uncommon bravery . . . [Carl] Sagan would have liked this book -- Oliver Moody * The Times *Compelling . . . The book is not so much a claim for one object as an argument for a more open-minded approach to science - a combination of humility and wonder * New Statesman *An astronomical Sherlock Holmes . . . You don't have to share his conviction to be impressed by the breadth of his argument * Washington Post *In this passionately argued, visionary book, astrophysicist Avi Loeb urges us to abandon the arrogant fantasy that we are the only sentient life form in the universe. The clues are fascinating, and still more are Loeb's arguments for what they might reveal to us about our own brilliant, blinkered, and quite possibly doomed civilization -- STEPHEN GREENBLATT, Pulitzer prize-winning author of THE SWERVEA serious scientist makes a serious argument for the hypothesis that our solar system was visited by an object from an extraterrestrial civilization. Is the hypothesis right? Who knows. But let's try to find out! -- ERIC MASKIN, Nobel laureate in EconomicsIt's good to be sceptical of audacious ideas. But it's also important to be open to audacious possibilities. Loeb's sumptuously written book will provoke you to think about the possibility of intelligent life elsewhere in the universe in new and stimulating ways -- SEAN CARROLLAn exciting and eloquent case that we might have seen a sign of intelligent life near Earth - and that we should search further. World-renowned scientist and innovative thinker, Avi Loeb opens your mind to some of the most important questions facing us as humans: scientific curiosity is key to our future success -- ANNE WOJCICKI, CEO and co-founder, 23andMeA provocative and thrilling account of the search for extraterrestrial intelligence . . . Professor Loeb asks us to think big and to expect the unexpected -- ALAN LIGHTMAN, author of EINSTEIN'S DREAMSOne of the more imaginative and articulate scientists around . . . half memoir, half soaring monologue * New Yorker *A persuasive scientific argument about 'Oumuamua's otherworldly origins, and delves into why his peers have been so hostile to the idea of life outside of Earth * New York Magazine *In publishing his theory, Loeb has certainly risked (and suffered) ridicule . . . Still, it's thrilling to imagine the possibilities * New Yorker *Have aliens ever been to our solar system? A quick trawl of the internet will reveal any number of people who think that they have, but when the suggestion comes from a distinguished Harvard astrophysicist, maybe it's time to sit up and take notice -- 4-star review * Mail on Sunday *He may or may not be right about 'Oumuamua. But that hardly seems to make much difference to what is ultimately the main thesis of his book . . . Mr Loeb is surely correct that scientists studying the vastness of the cosmos should entertain risky ideas more often, for the universe is undoubtedly more wild and unexpected than any extremes conjured by the human imagination. * The Economist *Fascinating and very accessible . . . certainly very well worth a read * Church of England Newspaper *
