RUTH HOGANCyprus in the run up to the civil war of the 1970s... the threat of it hangs in the atmosphere like a fine mist. A terrible thing, war. Against this backdrop of war and violence, the island's inhabitants make the best they can of their lives, building friendships, falling in love, having children, watching people die, making mistakes.Maria Petrakis, however, flees a brutal marriage on the island where she has always lived for London and a new start. She opens a bakery on Green Lanes in Harringay - the centre of the small Greek Cypriot community whose residents have settled there to escape the war and start again. Here she comes into her own as she heals and atones through the kneading of bread and the selling of shamali cakes and cinnamon pastries to her customers. There are glimpses of the lives of her neighbours, friends and customers as they buy their bread and cakes. There's Mrs Koutsouli, whose heart was broken when her handsome son married a xeni, an English woman with fish-eyes and yellow hair. There's Mrs Pantelis, driven half-mad with the grief of losing her son, Nico, in the war. And there's Mrs Vasili who claims to be related to Nana Mouskouri and grows her hair upwards so she can feel closer to God. Finally, there's Elena, Maria Petrakis' daughter-in-law, who has been suffering with the blackness since having a baby, and whom nobody knows quite how to help. The Making Of Mrs Petrakis is a story about the limited choices women sometimes find themselves confronting. • Gluten-Free Flavor Flours: A New Way to Bake with

Workman Publishing Gluten-Free Flavor Flours: A New Way to Bake with

    5 in stock

Book SynopsisThe James Beard Award–winning gluten-free cookbook, now in paperback! Baking with flavor flours—oat flour, sorghum flour, teff, coconut flour, and nut flours, like almond and hazelnut—adds a new dimension to dessert recipes. Rather than simply adding starch and structure to a dessert (as is the case with wheat flour), these flours elevate the taste of the dessert as well. The recipes incorporate the most popular alternative flours available on the market today and use them in interesting ways, both alone and in combination. Gluten-free bakers will find a whole new range of baking options at their fingertips. Chapters are organized by flour, each one highlighting the best recipes that flour can be used for—be it muffins, tarts, and scones made with sorghum flour; cakes, cookies, and crumbles made with oat flour; or chocolatey desserts made with teff. The chapter opener text highlights useful information for each flour: the taste, its flavor affinities, and how it’s best used, stored, and more. With 125 accessible and delicious recipes, including Double Oat Cookies, Buckwheat Gingerbread, Chocolate Chestnut Soufflé Cake, Blueberry Corn Flour Cobbler, and Coconut Key Lime Tart, living gluten-free has never been tastier.

  • A Treatise on the Art of Bread-making: Wherein,

Prospect Books A Treatise on the Art of Bread-making: Wherein,

Book SynopsisA treatise on the Art of Bread-Making is England''s first complete book on the subject. Published in London in 1805, it was the work of a medical man, little known for any other books, save a couple of pamphlets on gout and sore throats and fever, which he observed in his native Uxbridge in Middlesex. His book on bread is by no means medical, but rather an entertaining and instructive tour through the whole process of bread-making from growing and harvesting the wheat, to developing satisfactory yeasts, running an effective bakehouse and investigating a whole variety of recipes for breads made not only from wheat, but also other grains, potatoes and rice. The book ends with a resume of current laws relating to the sale of bread and an appendix containing the witness statements to a parliamentary committee on baking in 1804. This is a modern transcription of the original, now exceptionally rare and costing more than $1,500 in the antiquarian book trade. There is a short introduction, but otherwise no editorial matter. An earlier version of this transcript was published by Prospect Books in 1993, but the edition is long since exhausted and the clamor for a reprint from enthusiasts of break-making has been loud. The literature of bread-making in Britain is by no means as full as that on the continent of Europe. Because baking was a trade craft, practiced by people barely on the verge of literacy, most instructions and technical lore were transmitted by word of mouth from master to apprentice down through the years. These instructions were deemed "secrets" and the very idea of publishing them in a printed book would have been anathema. For this reason, there are surprisingly few recipes in domestic cookery books of the period, the authors reckoning that cooks would leave it to the bakers. The literature did not really kick off until the Victorian period, and only rose to a flood in the last quarter of the nineteenth century. After Edlin, the next person to tackle the subject was a trained baker in 1828; the value, therefore of this first book is especially great, as no others exist.

  • Cakes Regional and Traditional

Grub Street Publishing Cakes Regional and Traditional

Book SynopsisJulie Duff runs an award-winning cake business, which supplies wonderful rich succulent fruit cakes and other traditional cakes to some of the countrys premier shops, such as Fortnum & Mason. Her most treasured collection of recipes, some of them from generations of her own family which was first published to huge critical acclaim in 2003 has now been revised and updated. She says in her introduction my passion for cakes can be wholeheartedly blamed on my grandmother who spent many hours letting me mix fruit cakes at the kitchen table. It was inevitable that one day I would derive pleasure from baking cakes. This remains one of the most comprehensive collections of cake recipes published in one mammoth volume. Cakes Regional & Traditional encompasses all the traditional, historical and regional cakes from the British Isles. With the combined circulation of cake making magazines exceeding 50,000 per issue the market for this book is assured as other cake making books specialize in either wedding cakes or childrens novelty cakes and there is no one source for the hundreds of cakes which are such an integral part of British cooking.Trade ReviewSHORLISTED FOR THE 2004 GLENFIDDICH BOOK OF THE YEAR
