    10 in stock

Book SynopsisFor such a small fish, the herring has played an enormous role in history. Since the Middle Ages battles have been waged for it; international economic alliances have formed over it; a number of major cities owe their initial prosperities and structural foundations to it. Unquestionably, political powers have risen and fallen with the herring's own rise and fall in population. In Herring: A Global History Kathy Hunt looks at the environmental, historical, political and culinary background of this highly prolific, delicious and easily caught fish. It will appeal to food lovers, history buffs and anyone who has ever eaten British kippers, German Bismarcks, Dutch matjes or Jewish chopped herring.

Book SynopsisUncle Aron's compliments, which hadn't changed since the days of the Bible, didn't sound so great. One time, he told my mother that she was awesome like an army with flags.' Another time, he informed her that your nose is like the tower of Lebanon." Meet the village it took to raise Gil Hovav - colourful aunts and uncles hailing from one of the most respected lineages in the Jewish world (Hovav is the great-grandson of Eliezer Ben-Yehuda, the reviver of the Hebrew language). This book includes twenty-two funny and heart-warming stories awash with love and longing for the people who raised one skinny and cross-eyed Jerusalemite boy to love poor-man's food, to love proper Hebrew and, most importantly, to love people. The nostalgic writing is dished up with more than twenty delicious family recipes with the seal of approval from Gil Hovav, the man who has played a major role in the remaking of Israeli cuisine and the transformation of Israel from a country of basic traditional foods into a gourmet nation . Readers get to chuckle at Hovav's amusing recollections and salivate over his family recipes for sweet sour chorba tomato soup and his Aunt Levana's eggplant and feta bourekas. If you've ever wondered how to make hilbeh or slow-cooked eggs (or if you're simply itching to expand your culinary repertoire), this book is for you. • Reaktion Books Milk: A Global History

    10 in stock

Book SynopsisMilk, poured over cereal in the morning and splashed in coffee, is part of daily life in the West. Though milk is the sustaining and essential food of all mammals, and worldwide demand for it is growing every year, the majority of the world's population cannot digest raw cow's milk. Of those that do drink milk regularly, most have never actually tasted raw milk; what is known as milk today is a heavily treated version far removed from its natural state. In "Milk", Hannah Velten explores the myths and misconceptions surrounding the drink. Modern milk processing produces a safe, clean beverage that is far removed from real milk straight from the cow, but advocates of raw milk long for the days before pasteurization, homogenization and standardization. Paradoxically, milk back then was likely to be even less natural than today: known as the white poison, and filled with additives to make it look like milk after extensive watering-down, it was bacteria-ridden and dangerous to the health of invalids and infants. Now that milk has cleaned up its act, it is considered a staple for a healthy and balanced diet. Velten investigates how and why conceptions of milk have shifted in the public consciousness, from the science of nutrition, to dairy industry advertising and government endorsements. "Milk" will surprise and entertain in equal measure.Trade ReviewBooks in Reaktion's Edible series are paragons of their type; concise and flavorful, jammed with interesting facts, period photos and just a handful of recipes, in case you want to "do it yourself". I recommend these books to foodies and academics alike. -- Robert Sietsema, restaurant critic for The Village VoiceTable of ContentsIntroduction 1 The First Milk 2 The White Elixir 3 White Poison 4 Solving the Milk Question 5 Modern Milk Recipes Glossary Appendix References Select Bibliography Websites and Associations Acknowledgements Photo Acknowledgements Index

  • Bittersweet: The story of sugar

Allen & Unwin Bittersweet: The story of sugar

    15 in stock

Book SynopsisForty years after first chewing on sugar cane in New Guinea, the home of sugar, the author underwent some complex dental work as a direct result of his sweet tooth. This led him to explore sugar cane's journey from New Guinea to Shakespeare's England. In the days before dentistry, people paid dearly for this sweet new food from exotic places. Queen Elizabeth I became so partial to hippocras, sugared almonds and pastilles that her teeth turned completely black.Bittersweet is full of ripping yarns and acts of bastardry. Through the ages, sugar has offered opportunities of tremendous riches to the unscrupulous few who grew and sold it. But in the days of manual processing, these fortunes were built on the backbreaking labour of slaves.Bittersweet explores the effects that sugar has had on the world. A foodstuff we take for granted and indulge in more than we should has caused wars and geopolitical balances that have shaped the modern world and the power balances we see in the 21st century.' The breadth of the connections Macinnis weaves through his tale continually surprises, all the more because the substance sugar is so deceptively simple that, before this book, we have taken it for granted. He has put his encyclopaedic knowledge to excellent use, placing science and technology naturally in a social context.' - Dr Peter Pockley, Australasian Correspondent for Nature.'Few foods have had such an impact on human history as sugar, from its origins, its influence on the slave trade and its use as a medicine, a luxury, a comfort food and now a cheap filler in the modern processed food supply. Peter Macinnis has traced its path carefully, cleverly crafting the story of all its sweet and sour effects.' - Dr Rosemary Stanton, Nutritionist.Table of ContentsAbout the authorAcknowledgmentsNote on measurements and moneyPrefaceIntroduction1 The beginnings2 The spread of sugar3 Sugar in the New World4 The English and the Sugar Business5 Fighting over sugar6 A science of sugar7 Rum and politics8 The end of slavery in the Americas9 Emancipation's harvest10 The rise of technology11 Labour problems12 Sugar in the twentieth centuryEpilogue: The costs and benefitsGlossaryReferencesIndex

  • Designs and Sketches for elBulli

Grub Street Publishing Designs and Sketches for elBulli

Book SynopsiselBulli was undoubtedly the most controversial and experimental 3-star Michelin restaurant in the world and Ferran Adrià – the chef who earned elBulli it's worldwide fame – has been acclaimed as the best chef in the world. Ferran and his team at elBulli were the first to employ an industrial designer as part of their creative team. Luki Huber was that industrial designer and he spent from 2002 until 2005 at elBulli working exclusively hand-in-hand with Ferran charged with inventing new ‘artifacts’ used either to prepare, cook, serve or perform Adrià’s unique culinary techniques. Luki kept all his drawings, sketches and beautiful photographs from this collaboration and they are brought together for the first time in this amazing notebook, with all the explanations of the purpose and stories behind every object. The book has a Prologue and Introduction from Ferran Adrià, and is a must for all devotees of this extraordinary chef and his restaurant. Swiss-born Huber was trained at the Lucerne School of Art and Design and at the Escola Massana in Barcelona. He has been living in Spain since 1994, and has collaborated on a regular basis with a range of innovative clients working from the product design studio he created in 1999. The results of his work with elBulli combining the rigors of gourmet cuisine and the innovations of industrial design have been exhibited in the Pompidou Centre in Paris, in the D.Day, le design d’aujourd’hui.

    10 in stock

Book SynopsisThe pepperoni roll, a soft bread roll with pepperoni baked in the middle, originated in the coal mining areas of north central West Virginia when Italian immigrants invented a food that could be eaten easily underground. This spicy snack soon found its way out of the mines and into bakeries, bread companies, restaurants, and event venues around the state, often with additional ingredients like cheese, red sauce, or peppers. As the pepperoni roll’s reputation moves beyond the borders of West Virginia, this food continues to embody the culinary culture of its home state. It is now found at the center of bake offs, eating contests, festivals, as a gourmet item on local menus, and even on a bill in the state’s legislature. The West Virginia Pepperoni Roll is a comprehensive history of the unofficial state food of West Virginia. With over 100 photographs and countless recipes and recollections, it tells the story of the immigrants, business owners, laborers, and citizens who have developed and devoured this simple yet practical food since its invention.Trade Review“In The West Virginia Pepperoni Roll, Candace Nelson offers us an insider’s take on the pepperoni roll, exploring the history, science, great pepperoni roll debates (sticks v. slices, Sheetz v. the people of West Virginia), cultural context, regional variations, and adaptations as only a native could. As the nature of my work as state folklorist takes me all over West Virginia, hungry both in appetite and in my quest to sample local traditional culture—including foods—I am grateful to have such a guide.” - From the foreword by Emily Hilliard
