Chelsea Green Publishing Co Mini-Forest Revolution: Using the Miyawaki Method
Book Synopsis‘There may be no single climate solution that has a greater breadth of benefits than mini-forests…[and] can be done by everyone everywhere.’ Paul Hawken, from the foreword Are you ready to join the movement to restore biodiversity in our cities and towns by transforming degraded and underused urban land into forests that can help heal the planet? In Mini-Forest Revolution, Hannah Lewis presents the Miyawaki Method, a unique approach to reforestation devised by Japanese botanist Akira Miyawaki. Lewis explains how tiny forests, as small as six parking spaces, can grow quickly and offer rich biodiversity and environmental benefits – much more so than forests planted by conventional methods. Today, the Miyawaki Method is witnessing a worldwide surge in popularity. Lewis shares stories of mini-forests that have sprung up across the globe and the people who are planting them – from a ‘Forest of Thanks’ in East London, to a mini-forest along the concrete alley of the Beirut River in Lebanon, to a backyard project planted by tiny-forest champion Shubhendu Sharma in India. Mini-Forest Revolution offers a revolutionary approach to planting trees and a truly accessible solution to the climate crisis that can be implemented by communities, classrooms, cities, companies, clubs, and families everywhere.Trade Review"My late friend and colleague, Professor Akira Miyawaki, wanted nothing more than to repair the forests of the world. He wanted trees in the ground, as do I. This book would make him happy."—Diana Beresford-Kroeger, author of To Speak for the Trees"We cannot solve problems by succumbing to fear and anger, and yet so much of the climate conversation is powered by the fearful narrative of a dying planet. In Mini-Forest Revolution, Hannah Lewis offers a different story—one that is authentic, honest, and powered by love. Her writing provides the inspiration, motivation, and recipe for working with nature rather than against it; for gathering our courage and creating the world we imagine."—Shubhendu Sharma, founder and director of Afforestt"Imagine a world where every modest scrap of worn-out dirt or asphalt—think tennis-court-size—can become a cooling, moisture-circulating, air-cleansing, wildlife-nurturing forest within a few years. Mini-Forest Revolution shows how ordinary citizens can embrace this trowel-ready solution, and are doing so even under the harshest, sun-bleached conditions."—Judith D. Cambridge University Press The Art of Electronics
Book SynopsisAt long last, here is the thoroughly revised and updated third edition of the hugely successful The Art of Electronics. It is widely accepted as the best single authoritative book on electronic circuit design, and is in fact so popular that it has been counterfeited - so beware if purchasing from a third party via an online retailer, as you may receive a very inferior physical product. In addition to new or enhanced coverage of many topics, the third edition includes 90 oscilloscope screenshots illustrating the behavior of working circuits, dozens of graphs giving highly useful measured data of the sort that is often buried or omitted in datasheets but which you need when designing circuits, and 80 tables (listing some 1650 active components), enabling intelligent choice of circuit components by listing essential characteristics (both specified and measured) of available parts. The new Art of Electronics retains the feeling of informality and easy access that helped make the earlier editions so successful and popular. It is an indispensable reference and the gold standard for anyone, student or researcher, professional or amateur, who works with electronic circuits.Trade Review'Who among us has not kept a cherished copy of AoE on our workbench throughout our careers? Engineers, hackers and makers of all stripes, rejoice for the third edition … has been worth the wait! Packed with tons of delicious knowledge to navigate electronics in both work and hobby. An encyclopedia of electronics knowledge, [The Art of Electronics] is a pleasure to read through for tips and tricks and is an unbeatable resource! Take a day out to read a chapter - you will learn things you didn't even know you didn't know. Or, refer to the pinouts, diagrams, and techniques as necessary to guide you through a difficult project. If you think electrical engineering is magical then you must pick up this tome!' Limor 'Ladyada' Fried, Adafruit Industries'First of all, after I forklifted [Chapter 5] onto my reading table, I sat down and read it. It is simply spectacular. That may be overly exclamatory language but it is the only appropriate verbiage I can summon. Spectacular, deep and wide. I especially like the comments about interpreting specifications and the deconstruction of the Agilent voltmeters is just, well, wonderful.' Jim Williams, Linear Technology Corp'Wow. Chapter 5 details every circuit artifact that I've encountered in the past thirty years in a through, pragmatic, and straightforward way. My only 'twinge' is that [it] disclosed and explained (in glorious graphical detail and with real part numbers) many topics that I thought were my personal trade secrets … I love the plots. I know that it must take an enormous effort to collate all of the device characteristics. It's worth the effort. The way … [it] present[s] the data allows the reader to get terrific perspective on a lot of landscape in a single view. Nice work.' John Willison, founder, Stanford Research Systems'Horowitz and Hill's third edition beautifully upgrades their earlier work, with substantial updates to detail, and without compromise to style, content, or technical quality. Like the second edition I've used for years, it is laser-focused on the working engineer. Delivered in folksy Horowitz and Hill style, it is rich with the kind of nitty-gritty information that's invaluable to circuit designers and manufacturers, much of which is absent (or difficult to find) elsewhere. This new book is a superb update, one which I'm sure will be treasured by those close to the art of analog circuitry.' Walt Jung, author, IC Op-Amp Cookbook'This epic work was created by two of the best experts in the field (with many others providing information). It defines the current state of the art in electronics … Most parts of the book will continue to be relevant for several decades. The 1124 pages (even more densely packed with highly accurate information than the pages of the second edition) will delight everyone who already knows about electronics … It is almost certain that you will like the third edition even more than the second … The information that is now available in the book is absolutely fantastic, both the quality and the quantity, and you should get [it] as soon as you can …' Wise Warthog blog'If you are looking for a handy and very practical electronics reference book, this is a good one. I think you will enjoy it. Thanks to Horowitz and Hill for updating this classic.' Lou Frenzel, Electronic Design (electronicdesign.com)'If you are a hobbyist or maker who wants to acquire or improve a well-rounded knowledge of electronics then The Art of Electronics is an ideal book for you. It starts from the very basics of voltage, current and resistance without getting heavily dependent on physics theory or mathematics, and proceeds to cover a huge variety of interesting topics. For electronic engineering students, [this book] … will help you develop the intuitive understanding, which will make it easier to put the maths in context, and it will be invaluable when you do practical work for design projects. The Art of Electronics brilliantly conveys its authors' enthusiasm and experience of practical engineering and is an inspiring read. Many people have described the earlier editions as the best book on electronics, so [this third edition] had a lot to live up to; fortunately, it does not disappoint. It deserves its gold cover.' Ian Bell, Everyday Practical Economics'I believe the strength of this book stems from the authors' background in physics … The key being that electronics is not their primary interest. This 'application perspective' is most evident in their presentation: the material is presented with the goal of understanding the behavior of electronic devices, circuits, and systems before the nitty-gritty details of calculating the behaviour … The authors are also liberal in their use of commercially available parts in their presentation, something rarely, if ever, seen in a typical textbook. There is an abundance of warning, based on real-world experience, of the many traps that lie in wait for the practitioner of the electronic art … In spite of the analog bent, the digital information in this book is an excellent source for the analog engineer to get started using digital systems for the control of analog circuits. All in all, a highly recommended addition to the working engineer's bookshelf. ' Greg Oshiro , Journal of the Audio Engineering SocietyTable of Contents1. Foundations; 2. Bipolar transistors; 3. Simon & Schuster Ltd First Man The Life of Neil Armstrong
Book SynopsisSoon to be a major motion picture, First Man by James Hansen offers the only authorized glimpse into the life of America’s most famous astronaut, Neil Armstrong – the man whose “one small step” changed history. In First Man, Hansen explores the life of Neil Armstrong. Based on over 50 hours of interviews with the intensely private Armstrong, who also gave Hansen exclusive access to private documents and family sources, this “magnificent panorama of the second half of the American twentieth century” (Publishers Weekly, Starred Review) is an unparalleled biography of an American icon. When Apollo 11 touched down on the moon’s surface in 1969, the first man on the moon became a legend. Hansen vividly recreates Armstrong's career in flying, from his seventy-eight combat missions as a naval aviator flying over North Korea to his formative transatmospheric flights in the rocket-powered X-15 to his pTrade Review'Let it be said at once that his book is an outstanding success. It has been immaculately researched and is packed with detail, but written in a way that will appeal to readers of all kinds...this is an important book, and should be in every scientific library.' -- Sir Patrick Moore * Times Higher Educational Supplement *‘The man was a fine engineer, a good pilot – although there is some dispute about that – patriotic, cool, courageous and hard-working, just the sort of guy you want next to you when the chips are down.' * Sunday Times *'Although he was the first man to set foot on the moon, Neil Armstrong has always been the least public of the Apollo 11 astronauts. He has seldom given interviews, or lent his name to merchandising tat, or haunted the same professional old-boy circuit as his former colleagues... But at 75, he’s finally decided to break his silence - or to have it broken for him by his official biographer, James R.Hansen.’ * Sunday Telegraph *'To understand Armstrong on his own terms is to see a large truth of our time...[Hansen’s] mastery of detail is put to splendid use. The narrative of the moon mission is crisp and dramatic, the science clear. He deftly takes us back into those few days of global fascination with the adventure of the three distant voyagers and the tense uncertainty about how it would turn out...I finished Hansen’s Apollo story with a wholly fresh sense of awe at the magnitude of NASA’s achievement...a compelling and nuanced portrait of the astronaut.' -- James Tobin * Chicago Tribune *'Neil Armstrong—naval aviator, research pilot, astronaut, American hero and larger-than-life icon. He may have thought it was "one small step for [a] man," but it was one giant leap for the rest of us...First Man is primed to be one of the definitive reference works on the lunar program.' -- U.S. Navy Captain William Readdy * Aviation Week & Space Technology *'Most of the astronauts’ books are about the adventure. Jim Hansen’s well researched and documented book is about the adventurer. First Man is a compelling story of a modern-day Columbus which provides the rare opportunity to understand the personal qualities driving explorers. Quiet, complex, and deep, Armstrong, as fuel was running out, was the right man at the right time to take America and the world to the surface of the moon.' -- Eugene F. Kranz, author of Failure Is Not an Option'A powerful, unrelenting biography of a man who stands as a living testimony to everyday grit and determination... A must for astronaut buffs and history readers alike.' * Publishers Weekly *'Ever since Apollo 11’s "one giant leap for mankind" in 1969 the world has wondered who Neil Armstrong really is. Now, at last, Jim Hansen has stripped away the myths and mysteries to bring us face to face with the man himself. This definitive portrait offers many new and fascinating details about Armstrong and his life and about the momentous and unforgettable era of exploration in which he was lucky enough—and talented enough—to play a key role.' -- Andrew Chaikin, author of A Man on the Moon'This impressively documented and engagingly written biography will stand the test of time.' * Library Journal *'Masterfully written...technically accurate, scholarly yet independent and accessible...Mission accomplished and a perfect touchdown.' -- Leonard David * Ad Astra, The Magazine of the National Space Society *'Hansen’s research is staggeringly impressive... A work that has great appeal for anyone interested in why we explore, who we are in this aerospace age, and what it was about the United States that could enable a little kid from Wapakoneta, Ohio, to take that "one small step" at Tranquility Base in the summer of 1969. A must read!' -- Richard P. Hallion, chief historian for the U.S. Air Force'Jim Hansen has captured the essence of Neil Armstrong, not only as the first man on the Moon, but also as an outstanding aviator and astronaut. I was there for Neil’s other major "space step"—he recovered Gemini 8 from the ultimate end game with aggressive action, cool skill and creative judgement seldom performed in any aviation or space endeavor. Just 16 days after the deaths of the Gemini 9 crew, he probably saved the Moon. Jim Hansen has written an exceptional and accurate account of a unique period in aerospace history and the adventures of Neil Armstrong.' -- Dave Scott, Gemini VIII, Apollo 9, Commander, Apollo 15

Scribe Publications Dark Emu: Aboriginal Australia and the birth of
Book SynopsisHistory has portrayed Australia’s First Peoples, the Aboriginals, as hunter-gatherers who lived on an empty, uncultivated land. History is wrong. In this seminal book, Bruce Pascoe uncovers evidence that long before the arrival of white men, Aboriginal people across the continent were building dams and wells; planting, irrigating, and harvesting seeds, and then preserving the surplus and storing it in houses, sheds, or secure vessels; and creating elaborate cemeteries and manipulating the landscape. All of these behaviours were inconsistent with the hunter-gatherer tag, which turns out to have been a convenient lie that worked to justify dispossession. Using compelling evidence from the records and diaries of early Australian explorers and colonists, he reveals that Aboriginal systems of food production and land management have been blatantly understated in modern retellings of early Aboriginal history, and that a new look at Australia’s past is required — for the benefit of us all. Dark Emu, a bestseller in Australia, won both the Book of the Year Award and the Indigenous Writer’s Prize in the New South Wales Premier’s Literary Awards.Trade Review‘Australia’s education system tended to emphasise the struggle and pluck of settlers. Dark Emu shifted the gaze, pointing to peaceful towns and well-tended land devastated by European aggression and cattle grazing. In a nation of 25 million people, the book has sold more than 260,000 copies.’ * The New York Times *’Unputdownable.’ -- Darina Allen * Irish Examiner *‘An extraordinary book.’ -- David Greig * The Herald *‘The truth-telling must go on.’ -- Stephen Fitzpatrick * The Australian *‘This is the most important book on Australia and should be read by every Australian.’ -- Marcia Langton * The Australian *‘[A] brisk and lucidly written account … This is an important and deeply researched reinterpretation of Australian history and a stark warning about the danger of accepting received wisdom at face value.’ * Publishers Weekly, starred review *‘Dark Emu ... is revolutionary, the most important book published in Australia by any writer in this or any other century.’ * Jersey Evening Post *‘Essential reading for anyone who wants to understand what Australia once was, or what it might yet be if we heed the lessons of long and sophisticated human occupation.’ -- NSW Premier's Literacy Awards judging panel‘I’m grateful for a book that has so enlivened the engagement of Australians with their country’s history … In spite of half a century of eloquent activism and scholarship, most Australians still grossly underestimate the sophistication of Indigenous culture, technology and governance. The popular embrace of Pascoe’s work suggests that many are keen to learn.’ -- Tom Griffiths, Emeritus Professor of History at the Australian National University‘[Pascoe’s] arguments about the reality of Aboriginal agriculture, acquaculture, food storage and preservation are not new, but hitherto they have been buried in scientific papers, less accessible writings, or not pursued in such a sustained manner. He has done a great service by bringing this material to students and general readers, and in such a lively and engaging fashion … I heartily recommend this book to teachers of Aboriginal studies.’ -- Richard Broome, Emeritus Professor of History at La Trobe University'[A]n important book that advances a powerful argument for re-evaluating the sophistication of Aboriginal peoples’ economic and socio-political livelihoods, and calls for Australia to embrace the complexity, sophistication and innovative skills of Indigenous people into its concept of itself as a nation.' -- Dr Michael Davis * Aboriginal History *

Amber Books Ltd Aircraft Carriers: The World’s Greatest Carriers
Book SynopsisOn 9 May 1912 the first airplane take-off from a ship was made from the deck of the HMS Hibernia. In July 1918, seven Sopwith Camels launched from the converted battlecruiser HMS Furious damaged the German airbase at Tønder and destroyed two zeppelins. The age of the carrier was born. In the interwar years the Lexington, Akagi and Courageous – class carriers were developed, but it was only during World War II that the aircraft carrier finally came into its own. Fleet carriers carrying 30–40 aircraft allowed the Japanese and US navies to project air power across the vast Pacific Ocean, with the Japanese raid on Pearl Harbor presaging a new kind of warfare. With the sinking of hundreds of ships during World War II, including the German battleship Bismarck in 1941, by the end of the war carriers ruled the waves and the era of the battleship had passed. Aircraft Carriers features 52 of the most significant flat tops and amphibious assault ships built since the 1920s until the present day, from the USS Yorktown, which survived direct hits during the battle of Midway (1942), through the Falklands War veteran HMS Invincible, to the mighty Nimitz class, the core of the US Navy’s carrier battle groups today. Also included are significant amphibious assault ships, such as the USS Tarawa and French Mistral. Each entry includes a brief description of the ship’s development and history, a colour profile view or cutaway, key features and specifications. Harvard University Press The Myth of Artificial Intelligence
Book SynopsisFuturists are certain that humanlike AI is on the horizon, but in fact engineers have no idea how to program human reasoning. AI reasons from statistical correlations across data sets, while common sense is based heavily on conjecture. Erik Larson argues that hyping existing methods will only hold us back from developing truly humanlike AI.Trade ReviewIf you want to know about AI, read this book. For several reasons—most of all because it shows how a supposedly futuristic reverence for Artificial Intelligence retards progress when it denigrates our most irreplaceable resource for any future progress: our own human intelligence. -- Peter ThielLarson worries that we’re making two mistakes at once, defining human intelligence down while overestimating what AI is likely to achieve…Another concern is learned passivity: our tendency to assume that AI will solve problems and our failure, as a result, to cultivate human ingenuity. * Wall Street Journal *Thoughtful…makes a convincing case that artificial general intelligence—machine-based intelligence that matches our own—is beyond the capacity of algorithmic machine learning because there is a mismatch between how humans and machines know what they know…AI can’t account for the qualitative, nonmeasurable, idiosyncratic, messy stuff of life. -- Sue Halpern * New York Review of Books *Artificial intelligence has always inspired outlandish visions, but now Elon Musk and other authorities assure us that those sci-fi visions are about to become reality. Artificial intelligence is going to destroy us, save us, or at the very least radically transform us. In The Myth of Artificial Intelligence, Erik Larson exposes the vast gap between the actual science underlying AI and the dramatic claims being made for it. This is a timely, important, and even essential book. -- John Horgan, author of The End of ScienceErik Larson offers an expansive look at the field of AI, from its early history to recent prophecies about the advent of superintelligent machines. Engaging, clear, and highly informed, The Myth of Artificial Intelligence is a terrific book. -- Oren Etzioni, CEO of the Allen Institute for AIA fantastic tour of AI, at once deeply enlightening and eminently readable, that challenges the overwrought vision of a technology that revolutionizes everything and also threatens our existence. Larson, the thinking person’s tech entrepreneur, explores the philosophical and practical implications of AI as never before and reminds us that wishing for something is not the same as building it. -- Todd C. Hughes, technology executive and former DARPA officialThere are several books out there addressing the trending topic of AI, but Larson’s The Myth of Artificial Intelligence is arguably the best one of them so far…Should be taught in every undergraduate level engineering program. -- Gábor István Bíró * Metascience *A discussion of general human intelligence versus the current state of artificial intelligence, and how progress in a narrowly defined, specialized area (how to play chess) does not necessarily mean we are getting closer to human-like thinking machines. So, take a rain-check on the impending arrival of the robot overlords, that is going to have to wait a while. -- Elizabeth Obee * Towards Data Science *Far and away the best refutation of Kurzweil’s overpromises, but also of the hype pressed by those who have fallen in love with AI’s latest incarnation, which is the combination of big data with machine learning. Just to be clear, Larson is not a contrarian. He does not have a death wish for AI. He is not trying to sabotage research in the area (if anything, he is trying to extricate AI research from the fantasy land it currently inhabits)…Insightful and timely. -- William A. Dembski * Evolution News *Larson’s book is excellent, and tells the story of how successful narrow AI has been in comparison to the failures of strong AI. It also shows us why we have no reason to believe that these failures will turn into successes anytime soon. The Myth of Artificial Intelligence also serves as a warning to be skeptical of the predictions of experts and expresses the importance of having a sound theory to properly practice science. -- Brendan Patrick Purdy * Law & Liberty *Believing in the myth of AI has more serious consequences for our society beyond merely losing sleep over the prospects of a robot uprising. The myth, Larson argues, is negatively affecting research in many fields of science…Comes at an opportune moment—when AI has breached the peak of expectations and is now inching downwards, into the trough of disillusionment. It deflates the hype surrounding the subject and offers coherent arguments against the inevitability and imminence of true machine intelligence. -- Viraj Kulkarni * The Wire (India) *A detailed, wide-ranging excavation of AI’s history and culture, and the limitations of current machine learning, [Larson] argues that there’s basically ‘no good scientific reason’ to believe the [AI] myth…A clever, engaging book that looks closely at the machines we fear could one day destroy us all, and at how our current tools won’t create this future. -- Ellen Broad * Inside Story *Discusses how widely publicized misconceptions about intelligence and inference have led AI research down narrow paths that are limiting innovation and scientific discoveries…Sheds light on the challenges that the field faces today and helps readers to see through the overblown claims about progress toward AGI or singularity. -- Ben Dickson * TechTalks *Lays out a bird’s eye view of the origins and ideas behind current AI methods…Disentangles the hype of AI from what is actually possible with current technology. Even as he sheds light on the gap between the singularity prediction and what machine learning is truly capable of, he emphasizes the significance of the myth. * Perspectives on Science and Christian Faith *

CABI Publishing Concepts for Understanding Fruit Trees
Book SynopsisAnyone who observes fruit trees may wonder how or why they behave in specific ways. Some trees grow upright while others have a spreading habit. Some produce many flowers and small immature fruit only to drop most of the fruit later on; others grow more strongly on their sunny side than their shady side. It is common to ascribe such behavior to the tree as a whole and state that trees preferentially "allocate" resources to specific organs. However, this is the wrong approach to understanding tree functioning and behavior. Trees are not in control of what they do. What trees do and how they function is shaped by the individual organs that make up the tree, not by the tree as a whole. The genetic code only indirectly determines the habit, structure and behavior of a tree by defining the behavioral and functional limits of the component organs, tissues and cells. Unlike animals that have a mechanism for collective control of the whole organism - a central nervous system - trees (and plants in general) are more appropriately considered as collections of semi-autonomous organs. These organs are dependent on one another for resources, such as water, energy and nutrients, but control their own destiny. This book presents a clear set of integrative concepts for understanding the overall physiology and growth of temperate deciduous fruit trees. The emphasis is on overarching principles rather than detailed descriptions of tree physiology or differences among the numerous species of fruit trees. Although the focus is on deciduous fruit trees, many aspects apply to evergreen fruit trees and trees that grow naturally in unmanaged situations. Highly relevant for students and researchers in pomology, horticulture and plant sciences, the book is also suitable for practitioners, extension staff, and novice fruit tree growers.Table of Contents1: Introduction 2: Energy capture and carbon assimilation 3: Uptake and assimilation of nutrient resources 4: The structure of trees 5: The carbohydrate economy of fruit trees 6: Understanding the shoot sink 7: Application of shoot growth rules for understanding responses to pruning 8: Understanding the root sink 9: Understanding the fruit sink 10: Understanding the long-term storage sink 11: Integration of tree source and sink activities

Chelsea Green Publishing Co Mastering Artisan Cheesemaking: The Ultimate
Book SynopsisThe key to becoming a successful artisan cheesemaker is to develop the intuition essential for problem solving and developing unique styles of cheeses. There are an increasing number of books on the market about making cheese, but none approaches the intricacies of cheesemaking science alongside considerations for preparing each type of cheese variety in as much detail as Mastering Artisan Cheesemaking. Indeed, this book fills a big hole in the market. Beginner guides leave you wanting more content and explanation of process, while recipe-based cookbooks often fail to dig deeper into the science, and therefore don’t allow for a truly intuitive cheesemaker to develop. Acclaimed cheesemaker Gianaclis Caldwell has written the book she wishes existed when she was starting out. Every serious home-scale artisan cheesemaker—even those just beginning to experiment—will want this book as their bible to take them from their first quick mozzarella to a French mimolette, and ultimately to designing their own unique cheeses. This comprehensive and user-friendly guide thoroughly explains the art and science that allow milk to be transformed into epicurean masterpieces. Caldwell offers a deep look at the history, science, culture, and art of making artisan cheese on a small scale, and includes detailed information on equipment and setting up a home-scale operation. A large part of the book includes extensive process-based recipes dictating not only the hard numbers, but also the concepts behind each style of cheese and everything you want to know about affinage (aging) and using oils, brushes, waxes, infusions, and other creative aging and flavoring techniques. Also included are beautiful photographs, profiles of other cheesemakers, and in-depth appendices for quick reference in the preparation and aging room. Mastering Artisan Cheesemaking will also prove an invaluable resource for those with, or thinking of starting, a small-scale creamery. Let Gianaclis Caldwell be your mentor, guide, and cheering section as you follow the pathway to a mastery of cheesemaking. For the avid home hobbyist to the serious commercial artisan, Mastering Artisan Cheesemaking is an irreplaceable resource. Trade Review Booklist- "The first point to make is that this oversize book is stunningly presented, with easy-on-the-eye text, helpfully broken up by subject headings, several on a page. And the photographic illustrations are in rich color and with clear detailing that makes the close-up shots comfortable on the eye as well. This handbook is for readers serious in their interest in and pursuit of home cheesemaking. With authority and clarity, the author delves deeply into the subject, explaining all the scientific aspects of the processes involved (in her words, 'the beautiful interplay of science and art that goes into creating truly great cheeses'), including measuring acid development, aging cheese, adding flavors to cheese, and thinking about various ideas for equipment and work space. Part two is, as the author indicates, where the fun begins. Recipes are offered and explained in very easy terms. A complete package." ForeWord Reviews- "Somewhere between art and science, cheesemaking is not for the faint of heart. Caldwell begins her guide to the enterprise with a great deal of science. An extremely nuanced process becomes friendly through the author’s cheery advice and enthusiasm, then the book transitions into recipes that range from simple to quite advanced. A great guide for beginners and experts alike, Caldwell makes sense of the culture of cheese-making. Between recipes and advice, Caldwell gives credit to other experts in the field, pointing to relevant books, suppliers, and masters of the craft. The book also features a useful glossary of terms, an appendices with a troubleshooting guide, quick reference guide, and resources list. The layout is easy to read and well-organized; pictures illustrate what the end product should look like, a useful referent for those new to the process. More experienced cheesemakers will find ample difficulty to suit their study. Recipes start with the history of the cheese, then list ingredients, steps, and large-batch guidelines. From equipment to acidity, humidity to storage, Caldwell takes care to make sense of every step and each element. Throughout the process, she offers multiple options for further study and understanding, encouraging her readers to embrace the art, science, and community of cheesemaking. Caldwell’s comforting and impassioned talk of cheese will encourage any student willing to take on the adventure of cheesemaking. With its depth of information, this book will keep on giving as cheesemakers increase their mastery of the craft."Bookwatch Review- Home hobbyists and any serious about commercial artisans will find Mastering Artisan Cheesemaking the ultimate key to moving from very basic ideas to creating masterpiece cheeses. Recipe-based cheese-making books alone often fail to cover the science and art of small-scale cheese making for all skill levels: this book packs in some thirty basic recipes with profiles of cheesemakers from around the world, information on home-scale equipment and cheese aging, and more. The result is a powerful recommendation that goes far beyond recipes alone to delve into the art and science of cheesemaking.“Easy to understand and fun to read, Mastering Artisan Cheesemaking provides valuable information on every aspect of cheesemaking—an excellent resource for both cheese makers and cheese lovers.”—Sally Fallon Morell, President, The Weston A. Price Foundation, and cheesemaker "I am truly knocked out by this wonderful book. Mastering Artisan Cheesemaking is simply superb, and well-nigh flawless. Caldwell's voice comes through so clear, friendly, and free of clinicality. I have learned so much that I didn't realize I didn't know. In fact, the book is so good I'm a little embarrassed that I didn't even know how badly I needed it, and feel I am a vastly improved master cheesemonger for having been blessed with reading it."--Steven Jenkins, author of Cheese Primer"If only Mastering Artisan Cheesemaking had been available a decade or so ago--my cheese making adventures would have been a lot less stressful. Already I see this as the new go-to book for my workshop attendees. Gianaclis Caldwell presents her method of making cheese as an intuitive process, and broaches the truly formidable task of the science of cheese making in an understandable way that only someone that has learned in the classroom and worked in the cheese room can. The section on surface ripened cheese is especially good since these cheeses are more difficult to ripen. Go out and get this book, if you haven't already."--Jim Wallace, New England Cheesemaking Supply Company“Gianaclis Caldwell has poured her generous mind and heart into this book, and reveals the secret life of one of humanity’s most delicious foods. Mastering Artisan Cheesemaking is a wealth of in-depth information won by first-hand experience, yet it’s friendly and reassuring and skillfully unpacks the science and craft of cheesemaking for the interested hobbyist and the artisan alike. After reading it, I’m more fascinated by cheese than ever! My next project may well be a few little bloomy rinds. . . .”—Margo True, Food Editor, Sunset Magazine"Mastering Artisan Cheesemaking is the one book that tells you everything you need to know to become an award-winning cheese maker. Caldwell's practical and straightforward explanations make this entire book (along with its amusing anecdotes) a great pleasure to read. She makes it clear that artisan cheesemaking is a serious endeavor; but her light-hearted approach will remove the fear factor and inspire you to make a go of it anyway. And for everyone who just loves to eat fine artisan cheeses, this book will elevate your respect for all that goes into their creation. Among the recent bounty of books on cheese, this one is a must-have."--Max McCalman, author of Mastering Cheese"I am in awe! For anyone who has ever written a book or sweated over a cheese vat, you know that both require artistry, focus and discipline, dedication, time and more time, and perhaps a bit of creative insanity. Gianaclis Caldwell has either a twin or a clone! As an accomplished artisan enterprise in Southern Oregon, her cheeses from Pholia Farm are beautiful, luscious, and consistently at the top of the game. In her new book, she argues eloquently for the strong relationship between art and science, for deeper understanding and appreciation of milk, and the chemistry and alchemy of a cheese vat. With dozens of recipes, she guides us to create delicious, consistently top-quality cheeses. And as the landscape of American artisan cheese heads towards 1,000 small-scale producers, Mastering Artisan Cheesemaking offers each of them new insights, essential knowledge, and encouragement to experiment and succeed. I deeply admire and respect her ability, standards, and work ethic...now if I could just figure out how she did both!"--Jeffrey P. Roberts, author of The Atlas of American Artisan Cheese "Mastering Artisan Cheesemaking is a must-have book for the aspiring cheesemaker or cheesemonger. Not only is it amazingly easy to use as a reference book - laying out cheese science in as clear and jargon-free a way as possible - it's also a fun time for the cheese obsessed reader. Why does that rind look like that? How does that cheese get that amazing flavor? I'll admit, this book helped clear up some misperceptions I have held for twenty years about the way certain cheeses are made. I've read this once, but I know I will be referring to it over and over again.--Gordon Edgar, author of Cheesemonger: A Life on the Wedge"Gianaclis Caldwell has combined her extensive knowledge as an award-winning cheesemaker with complementary information from a variety of sources to create a practical guide that will delight both aspiring and seasoned home-scale cheesemakers. Mastering Artisan Cheesemaking will be a valuable addition to any home cheesemaker's library."--Paul Kindstedt, author of Cheese and Culture and American Farmstead Cheese"Mastering Artisan Cheesemaking is a beautiful book, rich in theory and practice. Whether you want to deepen your appreciation and understanding for cheese, produce for your family, or bring artisanal cheeses to market, you won't be disappointed."--Shannon Hayes, author of Radical Homemakers and Long Way on a Little"Gianaclis Caldwell, a farmstead cheese maker of famously delicious cheeses, has--amazingly--revealed all her hard-earned secrets in this wonderful new book. Reading Mastering Artisan Cheesemaking is like taking an advanced cheese making class--not only do we learn how to make cheese at home, we learn the science behind the process, from flocculation to affinage. A must-read for anyone who wants to make cheeses at home."--Novella Carpenter, author of Farm City: The Education of an Urban Farmer “I have been waiting for a book like Mastering Artisan Cheesemaking for years. Clearly written with more than 290 illustrations, this full-color edition helps bring your site to life, reduce your cost of living, endow yourself and your community with skills of self-reliance and cooperation, and create living air conditioners of vegetation growing beauty, food, and wildlife habitat. Stories of people who are successfully welcoming rain into their life and landscape will invite you to do the same.Trade Review“Brad Lancaster has published a revised, third edition of his authoritative book Rainwater Harvesting for Drylands and Beyond: Volume 1, Guiding Principles to Welcome Rain into Your Life and Landscape. Lancaster has decades of experience in planting rain in Tucson, Arizona. He began to counter poor waterscape management after meeting water farmer Zephaniah Phiri Maseko. This man’s wisdom, and his practice of long and thoughtful observation of land to understand how rain flows through it and shapes it, is at the core of Lancaster’s rainwater harvesting practice. Tucson receives more water from falling rain than its consumers use. But destruction of the region’s forest, and development of impermeable urban zones has led to water scarcity, as Lancaster explains in this Ted talk. His book addresses this problem. It tweaks Maseko’s principles of water infiltration to fit the needs of his Tucson home. This involves creating mulch-filled depressions in his garden where rainwater infiltrates, and where household greywater can be diverted. It also involves applying these practices in the public arena; for instance, diverting rainwater from streets to irrigate crop-bearing trees on public land. Rainwater Harvesting’s five chapters walk the reader through principles of rainwater infiltration, using Lancaster’s own projects as case studies. The book’s appendices, which have been further developed in this new, colour edition, offer another incredibly valuable resource. They describe, for instance, patterns of water and sediment flow and how to best utilize them; traditional Southwestern rainwater harvesting techniques; a list of plants and their water requirements, and information on the water-energy-carbon nexus and how domestic rainwater harvesting saves energy and money, while reducing CO2 emissions. In short, any household or community committed to living sustainably by conserving and recycling water should read this book.”—International Rainwater Harvesting Alliance (IRHA)“Brad Lancaster has done it again. In revising his excellent book, he has given us a window into the world through the lens of water. Water connects all things. And Brad shows us water as a practical way of considering context and connection. From a world of water as commodity, he takes us to a world of water as moving, enriching exchanges, the stuff of life. A native friend got a job with his local water company, and rather than an engineering job, he saw it as a sacred trust. This is the shift that Brad leads us carefully through. Water is wealth and health—let’s treat it that way, and dance our way from scarcity to abundance.—Joel Glanzberg, author of the The Permaculture Mind; tracker; and teacher / designer of regenerative living systems; PatternMind.org“In a time of escalating resource scarcity and global conflict, this essential book helps us regain control of our water by showing us how to enhance our water and energy supply with simple, fun, and effective strategies at home and beyond.”—Maude Barlow, author of Blue Covenant; Senior Advisor on Water to the President of the United Nations General Assembly“Brad Lancaster clearly defines the differences between the path to scarcity and the path to abundance, both revolving around the wise use of water while avoiding the consequences of careless use. Throughout the book, alternatives are plainly described with illustrations that get to the point. I have worked in the field with Brad. He is unabashedly committed to the parallel causes of water and energy conservation. He asks incisive questions, searches for answers, tests solutions, documents findings, and happily shares his conclusions with all who care to listen. Clearly Mr. Lancaster is an agent for change, a true innovator, providing simple but powerful solutions to difficult questions facing society in both urban and rural situations.”—Bill Zeedyk, Zeedyk Ecological Consulting, LLC; co-author of Let the Water Do the Work“Lancaster’s book on rainwater harvesting is fantastic and an abundant guidebook for a more sane approach to our most precious resource. I highly recommend it.”—Jason F. McLennan, CEO, International Living Future Institute“This book and the thinking behind it should be part of the basic education of civil engineers, architects, landscape architects, and planners everywhere. As a civil engineer working for a progressive municipal water utility in an arid climate, I can see if a majority of our citizens followed these practices, many of our current and future challenges would be alleviated. The positive side benefits in terms of erosion-control, creation of bird habitat, and natural cooling would be exceptional.”—Patricia Eisenberg, P.E., Past president, Arizona Society of Civil Engineers“This wonderful book overflows with effective ways to beneficially cycle and enhance local water supplies, while maximizing power from the sun. It provides much-needed guidance and ideas on how to meet our resource needs, increase household and community potential, and protect the ecosystems upon which we all depend.”—Sandra Postel, founding director, Global Water Policy Project; Freshwater Fellow of the National Geographic Society; and author of Last Oasis“In an age of enormous, industrial questions about resources, this book is an antidote. In these pages are solutions on a human scale, taking water not from massive reservoirs or river diversions but straight from the sky.”—Craig Childs, author of The Secret Knowledge of Water“Though a bizarre irony, rainwater in the arid west is typically deflected away from water-starved land and shunted off to storm drains at great expense. Not so in Brad Lancaster’s universe. He welcomes rainwater into the landscape with creativity, intelligence, and humor, and puts it to use growing and enriching all kinds of resources, while reducing flooding and erosion, and enlivening the urban environment. In this new edition of Rainwater Harvesting for Drylands and Beyond, he welcomes us to join him in exercising the radical common sense of harvesting rainwater melded with the harvests of sun, wind, carbon, and more.”—Ann Audrey, Environmental Consultant, for integrating rainwater harvesting, habitat restoration, and edible trees“This applies three times as much to the third edition: Buy this book now. If you live in a dry place, buy it. If you live somewhere subject to droughts (which is everywhere), buy it. The simple techniques (and the principles behind them) can help you save bundles of money, and make the landscape around you more productive and beautiful, with less work and upkeep than you can imagine. Lend it to your neighbors, and you’ll benefit as well. (Heck—buy them each a copy.) This how-to manual has enough stories, illustrations, and simple ideas to inspire even the most unhandy among us (such as myself). Buy it, try a couple of projects in your backyard, and in a few years be sure to send Brad and me a thank you note!”—Kevin Dahl, former Executive Director of Native Seeds/SEARCH and author of WildFoods of the Sonoran Desert and Native Harvest: Gardening with Authentic Southwestern Crops
