Book SynopsisPlants require nutrients in order to grow, develop and complete their life cycle. Mineral fertilizers, and hence the fertilizer industry, constitute one of the most imp- tant keys to the world food supplies. There is growing concern about the safety and quality of food. Carbon, hydrogen and oxygen, which, together with nitrogen, form the structural matter in plants, are freely available from air and water. Nitrogen, phosphorus and potassium, on the other hand, may not be present in quantities or forms sufficient to support plant growth. In this case, the absence of these nut- ents constitutes a limiting factor. The supply of nutrients to the plants should be balanced in order to maximise the efficiency of the individual nutrients so that these meet the needs of the particular crop and soil type. For example, it should be noted that EU-wide regulations are not designed to govern the specific details of mineral fertilizer use. Although plants receive a natural supply of nitrogen, phosphorus and potassium from organic matter and soil minerals, this is not usually sufficient to satisfy the demands of crop plants. The supply of nutrients must therefore be supplemented with fertilizers, both to meet the requirements of crops during periods of plant growth and to replenish soil reserves after the crop has been harvested. For better or worse, urbanization and globalization have altered the diet and nutrition in both rural and urban areas. In many developing countries a persistent level of under nutrition exists both in rural areas and in urban slums due to less access to food needed for an active and healthy life. On the other hand, over-nutrition, or eating too much, has emerged among the middle-income groups. It is essential to have a better understanding of how people deal with their food in developing countries, in order to plan and implement food and nutrition programmes. This manual deals with the process of changing food habits and consumption patterns in developing countries. Nutritional implications, together with practical information is discussed in relationship to conducting field surveys. Part one of the manual provides insight into the dynamics of food habits and consumption and its socio-economic and cultural dimensions. Part two gives practical information on small scale surveys to be carried out within the framework of a nutrition issue; including data collecting on food habits and the measurement of food intake. This manual addresses professionals with practical or academic training and those who are involved in various types of food and nutrition programmes or related activities. Book SynopsisThe key to exploiting links between diet and health is to have a better understanding of how our bodies respond to what we eat. In the past, many food constituents were regarded as unimportant because they lacked a specific nutritional role. More recently nutritional research has been limited to a few dietary compounds, a handful of relevant biochemical pathways and a small number of genes pertinent to specific diseases. These studies have given rise to specific examples of benefits provided by individual/ groups of food compounds including non-nutrients, and demonstrated that whilst poor diet can accelerate age-related degeneration, a diet rich in fruits and vegetables, cereals and plant oils significantly reduces our risk of chronic disease. However, the benefits of dietary and lifestyle choices are not the same for everyone. Nutrigenomics offers a more holistic approach to nutritional research. It considers not only our genes and the effect they have on our response to diet but, also how diet affects our genes and proteins to alter our metabolism and our risk of disease as we age. However, the logistics associated with human study design and interpretation of the data generated, using these technologies, is complex. The European Network of Excellence NuGO was established in 2004 with the specific aim of developing and integrating omic technologies for European nutritional research. This has meant focusing on technical problems specific to nutrition as well as training existing and new researchers to use the technology alongside existing and new approaches. The workshop, Design of human nutrigenomic studies, reviewed examples of successful human nutrition studies using post-genomics technologies (transcriptomics, metabolomics, and proteomics) and the issues discussed are described in detail in this publication.
