Book SynopsisGluten-free diet (GFD) is the cornerstone treatment for celiac disease (CD). This condition is a chronic, systemic, autoimmune disorder caused by a permanent intolerance to gluten proteins in genetically susceptible individuals. In these subjects, the consumption of gluten causes damage of the small intestinal mucosa characterized by a dense lymphocyte infiltration and villous atrophy, leading to malabsorption of both macro- and micronutrients. This book discusses food sources and the role of gluten-free diets in celiac disease. It also discusses the health benefits of consuming a gluten-free diet.

  • Beyond Diet & Depression: Volume 2 --

Nova Science Publishers Inc Beyond Diet & Depression: Volume 2 --

    1 in stock

Book SynopsisVolume 2 offers in-depth knowledge about depression and its alleviation through dietary interventions as described briefly in Volume 1. This volume is intended for the benefit of the general public and the entire medical community interested in the effective clinical management of depression of diversified origin and to improve the therapeutic success through dietary interventions and other recently developed novel and disease-specific biomarkers for personalised treatment. This book is devoted particularly to provide recent knowledge about important healthy diets and their therapeutic potential in depression. In addition, it covers various clinically-significant aspects of disease-specific depression and its alleviation with specific dietary interventions. This volume highlights emerging knowledge about major depressive disorders (MDDs) with limited treatment success at the moment. Volume 2 consists of three parts. Part I describes various types of diets and depression; Part II describes disease-specific depression and its alleviation with specific dietary interventions; Part 3 describes recently discovered novel biomarkers and their clinical significance in diagnosis and personalised treatment of depression. This volume is written with a primary objective to highlight the clinical significance of specific dietary interventions early in the course of treatment and provide neuroprotection by inhibiting hippocampal and hypothalamic Charnoly body (CB formation) primarily involved in the etiopathogenesis of depression. CB is a universal preapoptotic biomarker of cell injury which is formed as a consequence of free radical overproduction during nutritional and/or environmental toxic insult in most vulnerable (stem) cells. CB formation is involved in progressive neurodegeneration and depression as a consequence of compromised mitochondrial bioenergetics. A detailed description of CB formation, its prevention and/or inhibition by antioxidants and/or pharmacological agents is provided in this volume for the effective treatment of MDDs. In addition, this book provides recent knowledge regarding emerging novel biomarkers and their clinical significance in the differential diagnosis, prognosis, and treatment of depression. There are numerous anti-inflammatory, antiapoptotic, growth-promoting antioxidants in our diet including flavonoids and polyphenols which can enter CNS without any allergic reaction about which limited knowledge is as yet available. This volume provides further insight along these directions and emphasises the significance of tryptophan rich diet, omega-3 fatty acids, B-Vitamins, Vitamin D3, minerals, and antioxidants for healthy living at any age.

  • Dietary Fiber: Production Challenges, Food

Nova Science Publishers Inc Dietary Fiber: Production Challenges, Food

    1 in stock

Book SynopsisDietary fibers are classified into water soluble or insoluble, and most plant foods include in their composition variable amounts of a mixture of soluble and insoluble fibers. This soluble or insoluble nature of fiber is related to its physiological effects. Insoluble fibers are characterized by high porosity, low density and the ability to increase fecal bulk, and act by facilitating intestinal transit, thus reducing the exposure to carcinogens in the colon and therefore acting as protectors against colon cancer. The influence of soluble fiber in the digestive tract includes its ability to retain water and form gels as well as a role as a substrate for fermentation of colon bacteria. This book discusses the production challenges, food sources and health benefits of dietary fiber.

    1 in stock

Book SynopsisThis book brings together a selection of studies written by specialists from universities and/or research institutions from every continent. The processes of change in systems of production, commercialisation, and consumption of food, as well as the problems and nutritional habits analysed here, develop within the framework of the technological and socio-productive transformations experienced in many parts of the world as a consequence of the transition from traditional rural societies to the predominantly urban and industrial societies of our time. Many of these societies are affected by the fluctuations, questions, or socio-economic uncertainties caused principally by what is named globalisation. The authors involved in this volume are from a variety of backgrounds and their theoretical-analytical focuses regarding eating habits are quite diverse. However, independent of their different perspectives and scientific disciplines (Anthropology, Communication, Economy, Marketing, Medicine, Nursing, Psychology and Sociology), all of these authors are united in their concerns regarding similar food processes and problems, such as the industrialisation of food production, junk food, fast food, eating disorders, overeating, obesity, the impacts of ideal body images on eating behaviours, lifestyles and feeding, anorexia, bulimia, organic foods, healthy foods, functional foods, and so on. Moreover, in a time shaped by a worldwide standardisation of eating habits, the search for identity, specificity, or distinction through the acquisition and consumption of foods is commonplace in many chapters of the book. Likewise, these chapters show a generalised interest on the negative effects of the advertising and communications media that often drive patterns of food consumption and provoke desires for ideals of beauty and body forms prejudicial to health. As the editor states in the preface, all this occurs in an ever more modernised and globalised world in which artificial procedures of the production of industrial foods that are quite opaque to the general public become increasingly widespread. In such a world, while people''s concerns over the healthiness of foods increase, we are witnessing a non-stop expansion of markets for organic food, as well as the repeated manipulation of growing consumers'' preferences for certain foodstuffs that they believe are healthy or have specific natural qualities. This manipulation frequently takes place through a variety of advertisements that announce a series of industrial foods as supposedly possessing these qualities. Obviously, a priority objective of these and other advertising strategies is to increase sales in the agro-alimentary sector in a context of obvious over-production and over-supply, which in turn is translated into the stimulation of food consumption. This would help explain such developments in the current consumer society, which is explored in further detail in many chapters of this book.

  • Purchasing Food Away From Home: Demand Patterns

Nova Science Publishers Inc Purchasing Food Away From Home: Demand Patterns

    2 in stock

Book SynopsisFood away from home (FAFH) is an important part of a typical American''s diet and continues to increase as a share of the food budget. Rising consumption of a particular kind of FAFHfast foodhas been blamed for American''s expanding waistlines and poor diet quality. The study examined in this book uses data from the 2003-11 American Time Use Survey to examine the effects of time-use behaviors, prices, sociodemographic characteristics, labor force participation, and prices on fast-food purchasing patterns in the United States before and after the Great Recession. Because fast food accounts for a large share of U.S. food expenditures and calorie consumption, a better understanding of the motivation behind trends in fast-food purchasing behaviors may help inform policies designed to improve the diet quality of Americans. This research complements previous studies that used food expenditure and food intake data (but not time-use data) to analyse the effects of demographic characteristics, prices, and income on fast-food purchases and consumption. In addition, this book discusses consumer spending at full-service and fast food restaurants, and the affect this has on the foodservice industry.

  • Zinc Deficiency: Etiology, Screening Methods &

Nova Science Publishers Inc Zinc Deficiency: Etiology, Screening Methods &

    1 in stock

Book SynopsisZinc is the second most prevalent trace found in the human body after iron. It is essential for normal cell function and metabolism, playing a central role in over 300 enzymatic reactions, and protects cells from free radical damage. The central role of zinc in cell growth and differentiation explains the dramatic effect of zinc deficiency in tissues with a rapid cell turnover such as hair growth. In recent years, much interest has been generated by the possibility that subclinical zinc deficiency may significantly increase the incidence of and morbidity and mortality from diarrhea and upper respiratory tract infections. Clinical manifestations of zinc deficiency include delayed sexual maturation, impotence, hypogonadism, oligospermia, alopecia, dysgeusia, immune dysfunction, night blindness, impaired wound healing, and various skin lesions. After bariatric surgery, zinc deficiency is often associated with other micronutrients deficiencies, mainly iron. Chapter One in this book provides a review of the etiology, health implications and management of zinc deficiency after bariatric surgery. Currently, recommendations regarding routine screening for zinc deficiency or the use of daily oral zinc supplementation in individuals after bariatric surgery are not based on clinical trials. Gaps that exist in the understanding of zinc deficiency are summarised in Chapter Two. Chapter Three brings attention to the important implications of zinc in carcinogenesis. It provides a comprehensive review of the current literature on the role of zinc in carcinogenesis, as well as highlights the significance of zinc homeostasis mechanisms, which are essential for understanding the key roles of this trace element in carcinogenesis.

Nova Science Publishers Inc Diets & Diseases: Causes & Prevention

    1 in stock

Book SynopsisThe improvement of life expectancy and quality is a primary goal of modern societies in both developed and developing countries. However, according to the World Health Organization, the global burden of diseases were estimated to be more than 2.74 billion DALYs with about 56.00 million global total deaths in 2012. In 2030, the projected global burden of diseases and global total deaths are similar to or even higher than that in 2012. What are the causes of DALYs and deaths? What proportion do the causes contribute to global DALYs and deaths? Are global DALYs and deaths preventable? Are daily diets associated with global DALYs or deaths? What is the significance of diets contributing to global DALYs or deaths? Answers to these questions should be vital for the prevention and reduction of global DALYs and deaths. Over 90% of causes contributing to the global total DALYs or deaths are modifiable or causable by daily diets. Therefore, understanding the association of diets with diseases is very necessary for us to reduce the global total DALYs or deaths in the future. Because of vast information about diets and diseases in literature, it is very difficult to fully encompass this data in a single manuscript. This book opts to collect a selected overview of association of diets with some important diseases. This book includes ten chapters. In Chapter One, it is well-researched and subsequently concluded by the authors that diets should be critical factors that can modify or even cause diseases, which significantly contribute to the global burden of diseases or deaths. In Chapter Two, their research, production, applications, regulations and future developments are discussed in detail. In Chapter Three, the evidence from experimental and clinical studies to show the potential effect of polyphenols from tea, coffee and cacao on the prevention of cardiovascular diseases are reviewed. In Chapter Four, the dietary causes of kidney diseases and their prevention by proper diet management are described. In Chapter Five, the dietary risk factors and prevention by proper diets are fully summarised. In Chapter Six, the liver disease risk factors existing in human diets are analysed. In Chapter Seven, the authors discuss how diets can play significant roles in the management or development of liver diseases. In Chapter Eight, the theories related to bone problems with respect to the hypo and hyper conditions of nutrients in relation to bone related problems and proper diet management to prevent them are examined in detail. In Chapter Nine, the association of arthritis and their various forms, causes and symptoms with improper diets and its prevention by diet management are introduced. Finally, in Chapter Ten, the association of diet with overweight individuals, obesity and its prevention by proper diet management are extensively discussed.

Book SynopsisFish plays a useful role in a healthy and balanced diet. Polyunsaturated fatty acids (PUFA), more specifically omega-3 fatty acids, exert a positive effect on the cardiovascular and nervous system. They also play a key role on the development of the neonates brain and their visual development. Due to these beneficial characteristics, the demand of PUFA concentrates has recently increased and, consequently, the industrial interest on the production methods. Fish oil has traditionally been used as the main source of PUFA. This book provides a comparison among physical and enzymatic techniques for getting omega-3 concentrates from fish oil. It also aims to resume the proximate composition (i.e. lipid, protein, humidity and ash content) of the main discarded species in the Mediterranean Sea; examines the role of fish oil and omega-3 fatty acids in the mitigation and treatment of traumatic brain injuries; and discusses the long-term cardiovascular effects and safety of fish oil among women with diabetes and their infants.

Diet alone doesn't cut it. Law #9 - Avoid Stupid Mistakes: Learn to be mindful and vigilant against dangers, both extreme and routine. Cultivate risk management skills to stay safe and sensible and eliminate "avoidable suffering." Law #10 - Use Your Brain: Engage in creative and stimulating activities away from your core daily responsibilities. Book SynopsisIn the early 1950s scientists became aware of the beneficial effects of the Mediterranean diet on health, after a survey carried out in Italy and in Greece that showed for the first time the relationship between diet and one of the highest life expectancies in the world. The main characteristic of the Mediterranean diet is its low lipid and unsaturated fatty acid content, essentially related to the consumption of olive oil. It is also based on the consumption of fresh fruits and vegetables, fish and cereals. This work, addressed to a wide public of professionals working in the field of food -- scientists, physicians, dieticians, public health and prevention policy decision-makers, researchers in agrofood industry -- summarises in detail the basic principles of this simple and balanced diet. This work, co-ordinated by a team of researchers and physicians from the Montpellier agricultural science research centre (Agropolis), broadens the nutrition field and also includes the agricultural production mode and the technologies used in the agrofood industry. It offers an original multidisciplinary approach and proposes a complete synthesis on a fascinating subject for all and sundry.

Book SynopsisComplex problems and ambitious goals are often thought to become easier by enlarging and diversifying the group of experts dealing with them. As a result, these complex entities are fragmented into smaller ones that can be dealt with by single laboratories. Bart Penders ventured into nutrition science to observe and join teams of scientists to find out what happens to these problems and goals. He attended conferences and workshops and worked in their laboratories. He shows that scientists mobilise everything in their power to solve problems: they reconstruct elements of the problem, such as our health. In the process, the search for health has led to its diversification.
