This report provides guidance on safe water use when preparing fresh produce and fish. It is also a guide for water risk management. Water is a major input in food, from primary production through all stages in the food value chain to consumption. The safest option in food production might be the use of potable or drinking water. However, this is often not a feasible solution and water of different quality could be fit for some purposes, provided it does not compromise the safety of the final product for the consumer. This paper suggests that numbers of E. coli present in water are not an appropriate measure of water safety. This book reviews sporadic Shiga toxin-producing Escherichia coli (STEC) infections and identifies foods that facilitate their spread, including meat, vegetables and fruits. The analysis covers 957 STEC outbreaks from 27 different countries. Overall, outbreak data identified that 16 percent of outbreaks were attributed to beef, 15 percent to produce and 6 percent to dairy products. In 57 percent of all outbreaks, the food sources could not be identified. STEC infections are a substantial public health issue worldwide, causing more than 1 million illnesses, 128 deaths and nearly 13 000 Disability-Adjusted Life Years (DALYs) annually. To appropriately target preventative interventions, it is important to determine the specific types of foods leading to these illnesses. Overall, the meta-analysis identified the beef and 'meat-unspecified' categories as significant risk factors for STEC infection, with significant variation depending on geographic region. Prioritising interventions to control beef supply chains may provide the largest return on investment when implementing strategies for STEC control

This report reviews the causes of veterinary drug carryover in animal feed and the transfer from feed to food, as well as known risks to human health and international trade, and suggests appropriate risk management strategies. The report is the result of an FAO/WHO Expert Meeting organized at the request of the Codex Committee on Residues of Veterinary Drugs in Foods. Carryover of veterinary drugs in feed can occur during feed processing, handling, transportation and delivery, as well as when feeding animals on-farm. It can cause adverse health effects both in animals and/or in humans consuming food originating from these animals. The publication recommends increasing awareness by providing easily accessible information about possible implications for carryover from the use of authorized veterinary drugs, notably as part of a structured training programme for all competent authorities, professionals and workers. It also calls for monitoring and control of raw feed ingredients that could be implicated in the transfer of veterinary drugs from feed to food.
