Cool Food School was established by BTEC-qualified Health Coach Deirdre with the mission to teach children of all ages about the joys of healthy eating. She travels to schools, preschools and parties to teach children the value of eating healthily through a range of fun workshops and camps.

Anyone that names their recipe ‘Beans to Make you go Pop’ is heading in the right direction to attract young people’s attention, particularly if their instructions come with this warning: “Keep all the windows open.” A health coach and mother of three, Doyle has taught thousands of children about food and cooking since opening her Cool Food School in Co Wicklow in 2018. She continues the fun in her new recipe book, in which the titles of the dishes are a hoot. There’s the Irish ‘Hummus Ata Tu’, the anger-recipe for Bash-it-about Chicken, or ‘It’s a Pizza Cake’ with add-your-own toppings, and the descriptive Spinach and Cheese Egg Muffin Thingies, for when you’ve run out of fancy recipe names … the aim is to inspire in young readers an appreciation of what they are eating, where their food comes from, and how it is prepared. The topic of seasonal eating provides food for thought as Doyle weighs the benefits of enjoying fruits and vegetables as they ripen locally and naturally versus the costs to both environment and stored produce of demanding strawberries in Ireland in January. Her recipes are graded by age range in terms of difficulty of preparation, with a symbol indicating where adult help or supervision is required
